Tasting notes
Appearance
The wine displays a deep red colour, with shades ranging from dark ruby to garnet, underscored by thick legs that reflect the generosity of its body.
Nose
Particularly expressive, the nose reveals deep aromas of cherry liqueur and liquorice. This fruity core is subtly enhanced by spicy notes of pink peppercorn and a refreshing touch of mint.
Palate
The attack is rich and enveloping, offering wonderful volume on the mid-palate. The palate unfolds mouthwatering flavours of chocolate-covered cherries, contrasted by a minerality reminiscent of sea spray and supported by serious tannins. The finish, of impressive length, stretches out with notes of pastry chocolate, cherry cola and smoked dark fruit.
Food and wine pairings
This red wine pairs wonderfully with rich, structured meats, such as roast lamb with herbs, a Provençal daube or duck confit. It is also an excellent match for spicy dishes such as a tagine or a mole poblano, as well as aged hard cheeses such as Comté or Gouda.
Serving and cellaring
For optimal enjoyment, we recommend decanting this 2014 vintage one to two hours before serving, at a temperature between 16 and 18°C. This wine can be enjoyed now and will continue to evolve favourably until around 2040.
The Elegance and Structure of a Californian Red Wine
The estate
Founded in 1989 in the United States, Tablas Creek Vineyard is the result of a historic partnership between the Perrin family, renowned in the Rhône Valley, and the American importer Robert Haas. Located in California, this pioneering estate spans approximately 270 acres. Today run by Jason Haas, representing the founding family, in collaboration with the Perrin family, the estate stands out for its environmental commitment. In 2020, it notably became the first vineyard in the world to achieve Regenerative Organic Certified® status, illustrating a holistic and sustainable approach to viticulture.
The vineyard
Located in the Adelaida District, west of Paso Robles, the vineyard benefits from a Mediterranean climate tempered by the proximity of the Pacific Ocean. The vines, farmed organically and regeneratively with the integration of livestock to promote biodiversity, thrive on hills with limestone-rich soils. This distinctive terroir, marked by warm days and cool nights, allows the grape varieties to achieve beautiful ripeness while retaining great freshness.
Winemaking and ageing
Crafted under the direction of Neil Collins, this wine is made from certified organic grapes. The winemaking follows a minimal-intervention approach, aiming to respect the pure expression of the limestone terroir and the grape varieties. The blend is carefully assembled following a rigorous parcel selection, preserving the tannic structure and aromatic complexity of the fruit.
Grape varieties
This blend is dominated by Mourvèdre, complemented by Grenache, Syrah and Counoise.
