    Tasting

    Colour
    The colour reveals an intense green-gold hue with emerald highlights.

    Nose
    Wonderfully elegant, the nose exudes aromas of white fruits, such as peach, interwoven with spicy notes, white flowers, and candied citrus. On aeration, a subtle mineral and vegetal touch of fern emerges.

    Palate
    Ample and structured, the palate seduces with its mineral sapidity marked by flint and a menthol-like freshness. The finish is remarkably long and persistent.

    Food and Wine Pairing
    This great white wine pairs wonderfully with seafood, noble shellfish such as lobster, or delicate fish served with beurre blanc. It also enhances white meats and poultry in cream sauce, as well as regional specialities such as baked pike.

    Service and Storage
    Built for long-term ageing, this Chevalier-Montrachet 2023 needs a few years to develop and can be enjoyed until around 2035, or even beyond for bottles stored under optimal conditions. It is recommended to serve it at a temperature of between 12 and 14°C.

    Other Characteristics
    This wine comes from vines grown using certified organic farming. To enhance its presentation and optimise its ageing potential, the bottle is sealed with wax.

    The Estate
    Founded in 2004 following the division of the family estate, Domaine Bruno Colin is now run by Bruno Colin himself. Located in Chassagne-Montrachet, at the heart of the Burgundy wine region, this estate spans nearly nine hectares divided into around fifty micro-plots. Drawing on an ancestral winemaking heritage, the current owner is committed to producing wines that reflect the purest expression of their terroirs. Thanks to a minimalist philosophy and rigorous soil management, the estate has quickly established itself as an unmissable benchmark in the Côte de Beaune.

    The Vineyard
    This wine comes from the prestigious climat of Chevalier-Montrachet, located in the commune of Puligny-Montrachet. The 0.04-hectare micro-plot, facing due east at an altitude of between 265 and 290 metres, rests on a thin, stony, poor soil composed of white marl and limestone. The vines, planted in 1962, develop deep root systems and are grown in strict accordance with organic farming practices.

    The Vintage
    The year 2023 stood out for its historically high temperatures. After a mild winter that encouraged early budbreak, spring saw a few cool spells before a very sunny June. Summer, initially rainy and overcast, slowed down véraison. However, a heatwave at the end of August accelerated ripening, resulting in a particularly early harvest at the end of the month.

    Winemaking and Aging
    The grapes for this Chevalier-Montrachet 2023 are hand-harvested in small crates and undergo a rigorous double sorting. After pneumatic pressing of whole clusters and 36 hours of static settling, alcoholic fermentation and ageing take place entirely in new 350-litre oak barrels on fine lees. Malolactic fermentation is complete. Ageing in wood lasts 21 months, followed by blending in stainless steel tanks for three to six months before bottling at the estate, with light fining and minimal filtration if necessary.
