    Tasting

    Colour
    The colour reveals a straw-yellow hue shading toward gold, with great clarity and crystalline brilliance.

    Nose
    The aromatic bouquet opens with elegant notes of fresh citrus fruits such as lemon and grapefruit. It is then enriched with delicate floral touches reminiscent of linden blossom, accompanied by nuances of ripe white fruit and a minerality evoking gunflint.

    Palate
    The palate offers a smooth and persistent texture, supported by a refreshing acidity. The whole is precise and finely etched, finishing with a subtle saline touch typical of its terroir.

    Food and Wine Pairing

    This white wine pairs wonderfully with seafood such as scallops or oysters, as well as firm-fleshed fish like turbot or sea bass. It also perfectly accompanies herb-roasted poultry or a creamy risotto.

    Service and Storage

    To fully appreciate this Saint-Aubin 2023, it is recommended to serve it at a temperature between 10 and 14°C. This wine can be enjoyed now but will continue to evolve favourably in the cellar until around 2032.

    The Mineral and Elegant Expression of a Great White Burgundy

    The Estate

    Officially founded in 2004 following the division of the Michel Colin family estate, Domaine Bruno Colin is located in the heart of Chassagne-Montrachet, in Burgundy (France). Now run by Bruno Colin and his wife Stéphanie, the estate spans just over eight hectares across some thirty parcels. Backed by solid winegrowing training, the current owner carries on the family legacy by championing a sustainable approach and mechanical soil work. The estate is renowned for its precise wines that faithfully express the diversity of their terroirs.

    The Vineyard

    The vines of this Saint-Aubin benefit from an ideal exposure, favouring harmonious ripening of the berries. This terroir rests on clay-limestone soils particularly rich in stones and white limestone, giving the wine its distinctive mineral signature.

    The Vintage

    The year began with a classic spring featuring optimal flowering at the end of May. Summer was marked by an alternation of heat and humidity, with no disease development. July and August saw intense heat, with a heatwave peak in mid-August, ideal for sugar concentration. Sporadic summer rainfall provided the vines with the water they needed ahead of an early, warm harvest in early September.

    Winemaking and Aging

    The hand-harvested grapes undergo gentle pneumatic pressing followed by a brief settling period. Fermentation of this Saint-Aubin 2023 takes place on fine lees in 350-litre oak barrels, with a measured proportion of new wood. Aging continues in barrels for twelve months before racking and blending in stainless steel tanks for a further three to six months. The wine is finally bottled and wax-sealed for optimal protection.
