Tasting Notes
Appearance
The wine reveals a deep purplish-red colour, brightened by intense ruby highlights.
Nose
The aromatic bouquet opens with fruity notes of raspberry, blackcurrant and forest berries. This ensemble is subtly enhanced by spicy touches of pepper, tobacco and wild herbs.
Palate
Boasting a lovely natural freshness, the palate is elegant and very well defined. It expresses a clear varietal identity and lingers on a long finish with a silky texture.
Food and Wine Pairing
This wine pairs wonderfully with roasted or grilled red meats, such as bistecca alla fiorentina, as well as game served with berry or herb sauces. It also matches beautifully with slow-cooked Mediterranean dishes or aged hard cheeses such as pecorino.
Serving and Ageing
To fully enjoy this 2022 vintage, it is recommended to serve it at a temperature of between 16 and 18°C, taking care to decant it beforehand. Thanks to its solid structure, it has the ageing potential to be cellared for several years.
A Modern Expression of Tuscan Wines by Castello di Ama
The Estate
Founded in 1976 by four Roman families, Castello di Ama is located in Gaiole in Chianti, in Tuscany. Now run by Lorenza Sebasti and Marco Pallanti, the estate covers 260 hectares, including 75 hectares of vineyards. A pioneer in the concept of cru, the estate stands out for its commitment to sustainability, certified by Equalitas, and for its integration of contemporary art at the heart of a medieval village.
The Vineyard
The grapes come from the Montebuoni vineyard in IGT Toscana, from plots located between 420 and 500 metres above sea level. The vines are planted at a high density of 5,200 vines per hectare on very stony clay-limestone soils, with north-west and south-east exposures. The estate applies sustainable viticulture methods, including the mating disruption technique, and guarantees the absence of synthetic chemical residues.
The Vintage
The year began with particularly mild winter months. From May onwards, the climate became extremely dry, marking one of the hottest seasons ever recorded. Rain returned in mid-August, without causing any disease thanks to the excellent health of the grape clusters.
Winemaking and Ageing
To craft this wine, each grape variety was vinified separately in stainless steel tanks maintained between 30 and 32°C, using exclusively indigenous yeasts. After 24 to 25 days of maceration accompanied by manual pump-overs, malolactic fermentation took place in tank. The blend was then made before ageing for around twelve months in fine-grained oak barrels, including 20% new oak.
Grape Varieties
This wine is the result of a blend of 50% Sangiovese, 25% Merlot and 25% Cabernet Franc.
