The estate
Founded in 1818 in Mareuil-sur-Aÿ by Nicolas-François Billecart and Élisabeth Salmon, the Champagne House of Billecart-Salmon remains an independent family business, now led by Mathieu Roland-Billecart, representing the seventh generation, alongside the Frey family, which holds a stake in the company. The vineyard extends over around one hundred hectares spread across the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. Renowned for the precision of its blends and the freshness of its style, the House of Billecart-Salmon has also committed to sustainable and organic viticulture.
The vineyard
The grapes used for this blanc de blancs come from Chardonnay plots grown in Champagne, on the region's characteristic chalky soils. These limestone terroirs give the grape variety a pronounced natural acidity and marked minerality, both essential to the freshness that the House of Billecart-Salmon seeks across all of its cuvées.

Winemaking and ageing
As with all of the House's champagnes, this Blanc de Blancs benefits from the winemaking methods developed by the House since 1958: slow fermentation at low temperature combined with cold settling, designed to preserve the wine's freshness and aromatic finesse. Ageing on the lees, carried out according to the House's standards, contributes to the champagne's texture and complexity.
