Tasting
Appearance
The wine reveals a magnificent pale gold hue enhanced by golden highlights, all enlivened by an exceptionally delicate effervescence.
Nose
The aromatic bouquet is complex, blending aromas of black fruit such as black cherry with subtle spicy touches of ginger and Sichuan pepper. Notes of berries such as blueberry and blackberry intertwine with delicate floral scents reminiscent of peony and old rose.
Palate
The attack is ample and highly expressive, carried by fresh, tangy red fruit flavours, notably wild strawberry and redcurrant. The texture, both crisp and generous, gives way to notes of apricot, fresh pear and white cherry. The finish lingers at length on smoky nuances and hints of candied lemon.

The Estate
Founded in 1818 in Mareuil-sur-Aÿ, the Billecart-Salmon house is an emblematic figure of the Champagne wine region. Still independent, this prestigious house is now run by Mathieu Roland-Billecart, representing the seventh generation. It draws on around 100 hectares of its own vineyards and sources additional grapes from nearly 300 hectares. Renowned for its uncompromising commitment to quality, the house stands out for its precise, low-temperature vinification, designed to preserve the freshness and elegance of its wines.
The Vineyard
The grapes for this cuvée come exclusively from the village of Ambonnay, located in the prestigious Montagne de Reims in Champagne. This exceptional terroir is rated 100% Grand Cru, offering ideal conditions for the vines to flourish.
Winemaking and Ageing
The making of this Extra Brut begins with vinification in tanks. The wine then benefits from extended ageing on the lees for 61 months, which gives it all its complexity.
