Tasting
Appearance
A beautiful golden yellow colour.
Nose
The aromatic bouquet opens with scents of ripe yellow fruits, reminiscent of mirabelle plum and quince. It is then enriched by indulgent notes of toasted bread, almond and hazelnut, underlined by pastry and brioche touches. Delicate hints of acacia honey and white flowers complete the whole.
Palate
The attack reveals a creamy texture perfectly balanced by a lovely liveliness. The palate offers a harmony between ripe fruit flavours, pastry notes and a subtle hint of citrus. The tasting concludes on a lingering finish marked by blood orange.
Food and wine pairings
This wine will pair ideally with fine seafood, such as pan-seared scallops with citrus, or roasted white fish served with a creamy sauce. It will also enhance white meats in sauce, such as poultry with almonds, and will perfectly accompany a fruity dessert such as a thin apricot and honey tart.
Serving and cellaring
It is recommended to serve the PN AYC 21 Blanc de Noirs Brut well chilled, at a temperature between 10 and 11°C, taking care to open it gently. This cuvée can be enjoyed now or kept in the cellar for further ageing.

The estate
Founded on 6 February 1829, the Bollinger House is a historic institution of the Champagne region. Born from the partnership between Paul Renaudin, Jacques Bollinger and Athanase-Louis-Emmanuel de Villermont, this family-owned brand is today led by Gonzague Villedey, appointed Deputy Managing Director in 2025. Based in Aÿ, the estate cultivates an exceptional vineyard classified as Grand Cru and Premier Cru. Renowned for its sustainable practices and traditional vinification in wood, it stands out for its deep commitment to the authentic expression of its terroirs.
The vineyard
The grapes used in the composition of this Blanc de Noirs come from the Champagne terroirs of Aÿ, Tauxières and Mutigny.
The cuvée
This cuvée is crafted from a 2021 vintage base, which makes up 51% of the blend. It is enriched with 49% reserve wines, including a 25% proportion of older wines exclusively from the 2012, 2013 and 2014 vintages.
Vinification and ageing
The PN AYC 21 Blanc de Noirs Brut benefits from prolonged maturation in the cellar. This ageing period is more than twice as long as the rules imposed by the appellation, thereby fostering the development of its great aromatic complexity.
