    The NV Brut Blanc de Blancs is a pure Chardonnay harvested in the Sézannais. The supple nose brings lemon, wet clay and smooth creamy polenta.     Tasting

    Appearance
    The wine displays a bright, pale yellow hue, enlivened by a fine, persistent bead of bubbles.

    Nose
    The bouquet reveals delectable aromas of fresh apple and citrus, accompanied by floral notes and hints of honey. White fruit comes through generously, evoking orchard fruit in syrup.

    Palate
    The attack is lively and fresh, carried by lovely energy. The palate expresses citrus and white fruit flavours, apple in particular, in an indulgent style. The finish shows lovely length, combining roundness with freshness.

    Food and wine pairings

    This Blanc de Blancs Brut makes an ideal aperitif. At the table, it pairs perfectly with an oyster mushroom and Comté risotto, Thai coconut chicken with cashew nuts or a simple roast chicken. It also goes well with gratin dauphinois, Brie de Meaux, seafood, fish, white meats and grilled vegetables.

    The estate

    Founded in June 2019 by Édouard Roy, Jérôme Queige and Camille Jullien Gilardi, EPC is the first start-up in Champagne. Based in Vindey in the Marne, the House works with seven or eight partner cooperatives across various Champagne terroirs (Bethon, Côte des Bar, Sézannais, Vertus). Backed by prestigious investors such as Xavier Niel and Didier Deschamps, EPC is shaking up the industry with its complete transparency and its single-cru, single-varietal cuvées made with minimal additives.

    The vineyard

    This Blanc de Blancs comes from the Côteaux du Sézannais, in the Bethon area, about three and a half hours by bike south of Épernay. This Champagne vineyard lies on Upper Cretaceous soils made up of chalk, marl and clay, a terroir particularly well suited to the expression of Chardonnay.

    The cuvée

    This Blanc de Blancs cuvée is made from 85% of the 2021 vintage, complemented by 15% reserve wines, which bring complexity and consistency to its aromatic profile. Its dosage is 5 g/L.

    Vinification and ageing

    The Blanc de Blancs Brut is vinified in stainless steel tanks. Full malolactic fermentation gives the Champagne its roundness and indulgent character while preserving its natural freshness.
