    Tasting

    Color
    The color reveals a pale, almost diaphanous hue, illuminated by subtle golden highlights, a testament to a particularly delicate pressing.

    Nose
    The aromatic bouquet proves complex, blending red fruit notes such as cherry and raspberry with indulgent aromas of baked apple and dried fruits.

    Palate
    On the palate, this wine is lively, airy and nervy. It offers an elegant texture carried by a fine, persistent mousse. Flavors of ripe pear, apple and blanched almond intertwine with touches of lemon zest and fleur de sel.

    Serving and Cellaring
    To fully appreciate this champagne, it is recommended to serve it at a temperature between 11 and 12°C.

    Food and Wine Pairing
    This champagne pairs wonderfully with poularde with morels, quail with grapes or a mushroom fricassee. It also goes very well with roasted poultry, mushroom risotto, a duck burger or aged cheeses such as an old comté or a beaufort.

    The Estate
    Although the family's winegrowing roots date back to the seventeenth century, the true creation of the estate's production at Geoffroy began in 1950, driven by Roger and Julienne. Located in the Champagne region, this family house cultivates 14 hectares of vines. Today, Jean-Baptiste Geoffroy, representing the fifth generation, heads the estate alongside his father René. Based in Aÿ since 2008, the estate stands out for its strong environmental commitment, favoring sustainable practices and biodynamic experimentation to express the authenticity of its terroir.

    The Vineyard
    Located in the Marne Valley in Champagne, the terroir dedicated to this cuvée is centered on the Premier Cru-classified village of Cumières, across historic south- and southeast-facing plots. The vines flourish on slopes that promote optimal drainage. They rest on clay-limestone soils rich in fragments of millstone grit and flint. The estate practices sustainable viticulture, free of chemical herbicides, favoring natural grass cover between the rows.

    Winemaking and Aging
    The grapes are harvested by hand at optimal ripeness. Pressing is carried out gently using a traditional press to retain only the "Tête de Cuvée" juices. Vinification takes place plot by plot and by gravity. Fermentation is carried out by indigenous yeasts in oak barrels and vats. The wine then benefits from extended aging on lattes in the estate's cellars.
