    Tasting

    Appearance
    A bright straw-yellow colour, crossed by a fine and steady effervescence.

    Nose
    The bouquet reveals aromas of citrus fruits and yellow fruits, nuanced by hints of ripe banana. Notes of yeast, white flowers and bread crust complete this elegant aromatic palette.

    Palate
    The attack is fresh and the texture is particularly creamy. The whole offers a perfect balance between roundness and acidity, stretching out on a long finish underlined by a subtle minerality.

    Serving and cellaring

    This Premier Cru Brut Tradition boasts a fine ageing potential. Depending on the disgorgements, it can be cellared and enjoyed until around 2033.

    The elegance and tension of a champagne crafted by Gonet-Medeville

    The estate

    Founded in 2000, the Gonet-Medeville House is located in Bisseuil, in the heart of Champagne. At the head of the estate, Xavier Gonet and Julie Médeville combine their respective legacies to craft wines of great precision. The estate spans a 12-hectare vineyard spread across prestigious terroirs. This brand stands out through an artisanal approach, refusing malolactic fermentation to favour tension and finesse, while incorporating an oenological culture inspired by the Sauternais region.

    The vineyard

    The grapes for this cuvée come from a 3-hectare area on the chalky terroirs of Bisseuil, Mareuil-sur-Aÿ and Le Mesnil-sur-Oger, in Champagne. The estate applies organic principles to the management of its vines.

    The blend

    This non-vintage Brut champagne is crafted from a recent base harvest, to which reserve wines are added to ensure the consistency, complexity and balance characteristic of the House.

    Winemaking and ageing

    After gentle pressing and settling, the fermentation of the Premier Cru Brut Tradition takes place 70% in temperature-controlled stainless steel tanks at low temperature and 30% in old oak barrels. The House deliberately blocks malolactic fermentation to preserve a beautiful liveliness. The wine is bottled seven months after the harvest, then benefits from 36 months of ageing on lees. It is released for sale at least four months after disgorgement.
