    Description

Characteristics and Tasting Notes for Dizy "Terres Rouges"

    Tasting

    Color
Pale yellow in colour with golden highlights, this champagne is elevated by a remarkably fine and persistent effervescence.

    Nose
Wonderfully complex, the aromatic bouquet opens with notes of wild red berries such as strawberry, raspberry and redcurrant. It then evolves toward delicate floral touches of rose petal and orange zest, enriched with mineral nuances, dried herbs and subtle spicy notes.

    Palate
The attack is lively and wonderfully fresh, offering a beautiful structure. The mid-palate reveals aromas of fresh red berries mingled with notes of brioche and sweet spices. The finish, remarkably long, stands out for its chalky minerality and indulgent touches of apple tart and ginger.

    Food and Wine Pairing
This great white wine pairs wonderfully with seafood such as oysters, lobster or crab, as well as with raw fish preparations like sushi. It will also enhance truffle dishes or a board of matured cheeses including Comté, Mimolette, Parmesan or Munster.

    Serving and Cellaring
With remarkable cellaring potential, Dizy "Terres Rouges" will continue to develop its aromatic complexity over the years in the cellar.

The Authentic Expression of a Great Champagne Blanc de Noirs

    The Estate
Founded in 1798, the House of Jacquesson is a true benchmark in the Champagne region. Historically renowned, it reinvented itself under the impetus of the Chiquet family from the 1970s onward, favouring the expression of terroir over the consistency of a house style. Today, the estate belongs to Artémis Domaines, led by the Pinault family, with Jean Garandeau as CEO. The estate oversees a vineyard of approximately 28 to 31 hectares, cultivated with the utmost respect for the environment, following an artisanal approach and deliberately limited yields to guarantee impeccable quality.

    The Vineyard
Located in the heart of the Champagne appellation, the "Terres Rouges" plot lies in the Premier Cru-classified village of Dizy. This vineyard of approximately 1.35 hectares rests on a gently sloping hillside facing east. Its name comes from its deep, reddish-brown soils, rich in limestone and iron oxide, overlying a chalk base. The vines, planted in 1993 and pruned using the Cordon de Royat method, are cultivated using sustainable and organic methods, without any use of herbicides, in order to preserve biodiversity and the authenticity of the terroir.

    The Blend
This cuvée is a Blanc de Noirs made exclusively from Pinot Noir sourced from the eponymous plot.

    Winemaking and Ageing
The making of Dizy "Terres Rouges" relies on gentle, minimal-intervention methods. After vertical pressing, only the first-press juice is retained. The must flows by gravity before a natural 24-hour settling period. Alcoholic and malolactic fermentation take place in large neutral oak foudres. The wine then undergoes extended ageing on the lees with regular bâtonnage to enrich its texture. Finally, bottling is carried out without fining or filtration, followed by a long period of cellar ageing before disgorgement.

    Grape Variety
    100% Pinot Noir.
