    Tasting

    Appearance
    The wine reveals a pale yellow hue with silvery glints, enhanced by fine effervescence and a crystalline mousse with delicate bubbles.

    Nose
    The nose unveils great aromatic complexity, intertwining notes of white fruits (green apple, pear) and fresh citrus. Subtle springtime floral touches blend with pronounced minerality reminiscent of chalk and gunflint, rounded out by light hints of white honey and almond.

    Palate
    The crisp, sparkling attack gives way to a generous mid-palate carried by beautiful acidic tension. The fruity flavours stretch into a long-lasting finish, resolutely dry, marked by elegant salinity and notes of wet stones.

    Food and wine pairings

    This champagne pairs ideally with delicate seafood such as fresh oysters or scallops. It also wonderfully accompanies white fish in a creamy sauce, fresh goat cheeses or tasty canapés served as an aperitif.

    Serving and cellaring

    This Brut Nature Blanc de Blancs can be enjoyed now, but its fine tension will allow it to continue evolving in the cellar to be savoured until at least 2033.

    The estate

    Founded in 1889 by Jean-Baptiste Laherte, the Laherte Frères estate is located in Chavot-Courcourt, at the heart of the Coteaux Sud d'Épernay in Champagne. Today, Aurélien Laherte, representing the seventh generation, has been running the estate with passion since 2005. A fervent advocate of viticulture that respects living ecosystems, he favours organic and biodynamic practices. The estate stands out for its meticulous plot-by-plot approach and its vinifications in wood, revealing with great precision the authenticity and mineral richness of its terroirs.

    The vineyard

    The grapes come from the estate's finest plots located on the Coteaux Sud d'Épernay. With an average age of 35 years, the vines thrive on soils rich in outcropping chalk, covered with clay, flint and limestone. This Champagne vineyard is cultivated according to the principles of biodynamics and organic farming, favouring soil work with horses and excluding all herbicides. Harvesting is carried out by hand at optimal ripeness.

    Vinification and ageing

    After gentle pressing using traditional presses, the musts are transferred by gravity. Alcoholic fermentation takes place mainly in small foudres and barrels, accompanied by regular bâtonnage. A partial malolactic fermentation is carried out to soften the acidity while preserving the mineral tension. This Brut Nature is then aged on fine lees for around six months before bottling. Disgorgement is performed manually, with no addition of dosage liqueur.
