    Tasting

    Color
    This wine reveals a pale to light golden hue, enhanced by a remarkably fine effervescence and a delicately creamy mousse.

    Nose
    The bouquet is particularly complex and elegant. It offers evolved aromas of brioche, toasted bread, hazelnut and fresh butter, harmoniously intertwined with notes of ripe lemon, green apple and white flowers. A subtle iodine and chalky touch rounds off the whole.

    Palate
    The attack is precise, carried by a lovely vivacity. The texture proves ample, expanding into a savory, deeply chalky mid-palate. The finish is long, mouth-watering and exceptionally pure.

    Food and wine pairing

    Ideal to enjoy on its own, this wine also pairs perfectly with seafood, white fish tartare, pan-seared scallops or roasted lobster. It goes equally well with delicate white meats or hard cheeses such as a young Comté.

    Serving and cellaring

    This "Cuvée Nicole" Vieilles Vignes Grand Cru Extra Brut 2008 can be decanted to fully enhance its aromatic expression. It should be enjoyed until around 2035.

    This wine is dosed as Extra Brut at 5 g/L. It was disgorged in December 2024.

    An exceptional Champagne by Pierre Moncuit

    The estate

    The brand's history truly began in the 1950s, when Pierre Moncuit decided to bottle his own wines, thus creating the family estate in the heart of Champagne. Located in Mesnil-sur-Oger, this 19-hectare property is now run by Nicole Moncuit, Valérie Charpentier and Yves Moncuit. Proud of its independence, the house stands out for its philosophy centered on the pure expression of terroir, without ever using reserve wines.

    The vineyard

    The grapes come exclusively from the prestigious Les Chétillons lieu-dit, located on the Grand Cru-classified terroir of Mesnil-sur-Oger in Champagne. This vineyard, farmed according to traditional agricultural principles and HVE-certified, rests on deeply chalky soils. It comprises very old vines planted in the first half of the 20th century, ensuring naturally low yields and optimal concentration.

    The vintage

    The year 2008 is known for having offered particularly favorable weather conditions, resulting in a harvest that was both very fresh and perfectly balanced.

    Winemaking and aging

    The winemaking of this "Cuvée Nicole" Vieilles Vignes Grand Cru Extra Brut 2008 takes place in stainless steel vats. To preserve the unique identity of the vintage, no reserve wine is blended in. The wine then benefits from an exceptionally long aging period of fifteen years on the lees in the estate's cellars before being disgorged.
