    Tasting

    Color
    The color is a deep garnet red with violet highlights.

    Nose
    The bouquet initially shows a light aromatic reduction, then reveals a wild, animal character with notes of leather, alongside ripe fruit.

    Palate
    On the palate, the wine shows richness and power while maintaining a lovely finesse. Stewed black fruit comes through fully, offering a character typical of the Pernand-Vergelesses appellation.

    Food pairings
    This red Burgundy pairs beautifully with white meats such as veal fricassee, poularde in a cream sauce, or suckling pig tenderloin. It also harmonizes wonderfully with goat cheese or Brillat-Savarin.

    Serving and cellaring
    Pernand-Vergelesses Village "Clos de Bully" 2023 is ideally enjoyed at a temperature between 15 and 16 °C.

    The estate
    Founded in Beaune in 1720 by Edme Champy, the house of Champy is the oldest négociant in Burgundy. Part of the AdVini group since 2016, it farms 21 hectares in the Côte de Beaune, from Volnay to Corton-Charlemagne. Under the technical direction of Dimitri Bazas, the house combines the roles of Négociant-Éleveur and winegrower, with half of the vineyards organically certified and the other half HVE-certified. As the last production site within the walls of Beaune, Champy stands out for its remarkable heritage, including 15th-century cellars and an Eiffel-style winery from 1900, awarded the “Entreprise du Patrimoine Vivant” label in 2021.

    The vineyard
    Clos de Bully is one of the oldest vineyards in Burgundy, first planted in 1158 by the monks of the Maizières Abbey. This historic parcel features a spring as well as a Roman well. Located on the rolling slopes between Aloxe-Corton and Savigny-lès-Beaune, this Pernand-Vergelesses terroir rests on clay-limestone soils.

    The vintage
    The 2023 vintage saw a late budbreak at the end of March for Chardonnay and in early April for Pinot Noir. The year produced wines with fruity, supple profiles, showing bright freshness in both reds and whites.

    Winemaking and aging
    Pernand-Vergelesses Village "Clos de Bully" 2023 benefits from cold maceration followed by fermentation with indigenous yeasts. Maceration lasts three weeks. Aging is carried out for 12 months in oak barrels, with 20% new oak.
