    The refinement and structure of a great Saint-Émilion wine

    The property
    Located in the heart of the village of Saint-Émilion, hidden from view, the Couvent des Jacobins is a place steeped in history. Founded in the 13th century, it is one of the oldest witnesses to the region's winemaking tradition. A family property for generations, it has been managed since 2010 by Xavier Jean, who is committed to preserving the soul and excellence of this emblematic estate.

    The vineyard
    The vineyard of Couvent des Jacobins covers 10.7 hectares spread over four distinct types of soil: limestone to the east of Saint-Émilion, clayey-sandy on Fronsadais molasses and on iron crasses to the southwest, as well as clay-limestone to the northeast. This geological diversity contributes to the richness of expression of the wine. The age of the vines varies from 8 to 61 years. The estate is run using organic farming, with occasional use of biodynamic preparations.

    Vinification and aging
    The harvest is carried out by hand, with meticulous sorting in the vineyard and then in the cellar. Each plot is vinified separately, in gravity-fed vats. The process includes a pre-fermentation maceration followed by a total maceration of 20 to 30 days, with gentle extractions adapted to each batch. The petit verdot undergoes manual punch-downs. Aging is carried out in French oak barrels, 40% of which are new and 60% of which have held one wine.

    Merlot (78%), cabernet franc (15%) and petit verdot (7%).
