    Tasting

    Appearance
    This dry white wine displays a pale, luminous robe.

    Nose
    Expressive from its youth, the bouquet unveils a delicate aromatic profile blending notes of white fruits and subtle floral touches, all underpinned by a strikingly pure, chalky minerality.

    Palate
    Both ample and delicate, the palate offers a refined, satin-like texture. A beautiful tension and a captivating minerality stretch the wine, giving it a lingering, fresh and mouth-watering finish.

    Food and wine pairings

    This cuvée pairs wonderfully with fine-fleshed noble fish, such as turbot, sea bass or sole, served with a light butter sauce. It also enhances shellfish (scallops, lobster, langoustines) as well as white poultry in cream sauce. Finally, it pairs perfectly with soft-ripened cheeses (brie, coulommiers) or cooked pressed cheeses such as a young Comté.

    Serving and cellaring

    It is recommended to serve this wine at a temperature between 12 and 14 °C, ideally in a large Burgundy wine glass. A light aeration of 15 to 20 minutes before tasting allows all its nuances to be released. Endowed with a beautiful structure, this wine can be enjoyed until around 2034.

    This wine stands out for an intensity described as light yet particularly persistent, favouring finesse, verticality and the pure expression of its terroir over power.

    The estate

    While the site's Cistercian origins date back to 1130, the Domaine du Cellier aux Moines underwent a true renaissance when it was established in its current form in 2004, following its acquisition by the Pascal family. Located in Givry, in Burgundy, this property extends over approximately 10.5 hectares. Now run by Philippe and Catherine Pascal, alongside their children, the brand stands out for its deep commitment to biodynamics (Biodyvin certified in 2023) and its highly qualitative production, focused exclusively on exceptional premiers crus crafted in an artisanal manner.

    The vineyard

    The cuvée comes from a tiny 27-are plot located in the former Clos des Meix, within the prestigious Puligny-Montrachet appellation. Facing south-east, the vines, around 52 years old, thrive at an altitude between 205 and 207 metres. They rest on very fine clay-limestone soils. This entire micro-plot has been cultivated according to the demanding principles of biodynamics since 2017, thereby promoting soil vitality and the authentic expression of the terroir.

    Winemaking and aging

    After a manual harvest, the grapes benefit from a highly precise vinification orchestrated by Guillaume Marko. The oenological approach, respectful of biodynamic principles, aims to preserve the freshness and energy of the fruit without ever masking the minerality. Every step in the cellar is meticulously designed to extract the quintessence of the terroir and elevate this wine, prioritising elegance and aromatic transparency.
