    Tasting

    Colour
    The colour reveals a deep ruby red hue, reflecting the fine concentration and optimal ripeness of the berries.

    Nose
    Wonderfully complex, the bouquet opens with sumptuous aromas of ripe fruit such as sweet cherry and blueberry. It is then enriched with floral notes of rose petals, spices, clove and incense, lifted by subtle touches of fresh mint and white pepper.

    Palate
    The palate offers a remarkable balance between power and elegance. Flavours of strawberry jam, woody spices and a hint of mocha unfold with great finesse. The structure, supported by delicate tannins, extends into an exceptionally long, spicy finish.

    Food and Wine Pairing

    This red wine pairs wonderfully with game meats such as roast pheasant, partridge or braised pigeon, particularly when served with porcini mushrooms. It also enhances high-quality red meats such as filet mignon or roast beef, as well as characterful, well-matured cheeses like Époisses.

    The Elegance of a Burgundy Grand Cru by Domaine Faiveley

    The Estate

    Founded in France in 1825 by Pierre Faiveley in Nuits-Saint-Georges, Domaine Faiveley has established itself as a true institution in Burgundy. Spanning more than 130 hectares across the most prestigious appellations, this historic estate is now run by the seventh generation, embodied by Erwan and Eve Faiveley. Under their guidance, the estate has modernised its facilities and steered the style of its wines towards greater finesse, while committing to organic viticulture in order to preserve the authenticity of its terroirs.

    The Vineyard

    This cuvée comes from a tiny plot of old vines planted in 1966, covering less than a hectare. Situated at an altitude of between 270 and 280 metres, the Chambertin-Clos de Bèze terroir lies on a gentle mid-slope. This exceptional soil is made up of a deep substrate blending limestone scree, silt and marl. Swept by winds from the north and sheltered from westerly rains, these vines benefit from a cool, well-ventilated microclimate.

    The Vintage

    2023 stood out for its particularly warm and generous weather conditions. Faced with extreme temperatures at harvest time, green harvesting was carried out across much of the vineyard to keep yields under control. Despite this, the growing cycle produced an abundant and high-quality harvest.

    Winemaking and Aging

    The grapes destined for the Chambertin-Clos de Bèze Grand Cru "Les Ouvrées Rodin" 2023 are hand-harvested before undergoing rigorous sorting. Fermentation begins naturally, accompanied by regular pumping-over to ensure gentle extraction. After gentle pressing, the wine is transferred into barrel in the estate's nineteenth-century vaulted cellars. Ageing lasts between 12 and 18 months in French oak barrels, a large proportion of which are new.
