The estate
Founded in 1692 by Antoine and Claudine Grand, Domaine Grand is located in Passenans, in the heart of the Jura. Today led by Emmanuel Grand, representing the sixth generation, and his partner Nathalie Morin, the estate underwent a decisive turning point in 2015. The duo made the bold choice to reduce their vineyard's surface area to eleven hectares in order to prioritize excellence and the expression of the terroir. Committed to a strong environmental approach, the estate is certified organic and applies rigorous biodynamic principles, combining respect for Jura traditions with a contemporary vision.
The vineyard
The grapes intended for this Crémant du Jura come specifically from the plot named Les Duboîtes. This unique terroir, situated at an altitude ranging between 250 and 300 meters, is characterized by soils composed of clay and limestone. The vines, around thirty years old, are cultivated by hand with the utmost care, in accordance with lunar cycles and biodynamic practices.
Winemaking and aging
The production of this Crémant du Jura Brut is based on a philosophy of minimal intervention. Fermentation is initiated naturally using a pied de cuve. The wine is then carefully transferred into old barrels to continue its development. Aging takes place on fine lees, with very few rackings, allowing the aromatic complexity to develop while preserving the natural brilliance of the fruit.
