    Tasting notes

    Colour
    This white wine reveals a beautiful pale yellow hue, subtly enhanced with green highlights.

    Nose
    The aromatic bouquet proves seductive and classic, unveiling scents of white flowers mingled with notes of ripe peach and apricot, all underpinned by a delicate mineral thread.

    Palate
    The attack is bright and precise. The palate offers a supple, rounded texture, revealing a lovely harmony between orchard fruit flavours such as apple and pear, and subtle buttery and vanilla touches. The whole is elevated by a refreshing minerality that lingers into a persistent, slightly spicy finish.

    Food and wine pairing

    This cuvée pairs beautifully with fish prepared in butter, such as sole meunière, or with shellfish like lobster and shrimp. It also perfectly accompanies roast poultry, dishes featuring hollandaise sauce, as well as soft-ripened or goat cheeses. A Caesar salad also makes for a surprising and delicious pairing.

    Service and storage

    For optimal enjoyment, this wine is best served at a temperature between 13 and 14°C. It can be enjoyed now, but also has the ageing potential to develop favourably until around 2028.

    The elegance and minerality of a great white Burgundy

    The estate

    Founded in 1920 by Arsène Amiot in Chassagne-Montrachet, Domaine Guy Amiot et Fils quickly established itself as a pioneer of estate bottling in Burgundy. Today, the fourth generation carries on this family legacy. The estate is renowned for its ability to express the authenticity of its prestigious terroirs through wines of great elegance.

    The vineyard

    The vines destined for this Bourgogne cuvée are located just on the edge of the Chassagne-Montrachet appellation area. They benefit from a favourable south-east-facing exposure. The terroir is distinguished by shallow soils dating from the Middle Jurassic, composed of limestone and clay-limestone. This geology forces the roots to draw their nutrients deep within the fractured rock, giving the grapes a unique mineral identity. The vineyard is managed according to the principles of sustainable farming, promoting biodiversity and soil health.

    Winemaking and ageing

    Production begins with hand-harvesting. After crushing, fermentation takes place in French oak barrels. The process includes regular lees stirring as well as a carefully controlled malolactic fermentation. Ageing then continues for around twenty months, combining time in barrel and in tank. This traditional method allows the oaky notes to be subtly integrated while preserving the purity of the fruit and the minerality of the terroir.
