    Tasting

    Colour
    This white wine reveals a beautiful bright gold colour leaning towards pale yellow, enhanced by subtle green highlights. Its golden hue is delicately intensified by the sunshine of its plot of origin.

    Nose
    The aromatic bouquet proves rich and complex. It opens with generous aromas of white and exotic fruits, accompanied by notes of white peach, fresh almond and a touch of vanilla. With aeration, floral scents of acacia and lime blossom emerge, underscored by nuances of honey, fresh butter and a pronounced mineral backbone.

    Palate
    The attack is round and generous, offering an unctuous, creamy texture. Balance is maintained by a lovely acidic tension that lends elegance. The finish, clean and free of astringency, lingers at length on flavours of toasted hazelnut, almond and a very present chalky minerality.

    Food and wine pairing

    This wine pairs ideally with grilled or sauced seafood, such as lobster or langoustines, as well as fish in a salt crust. It also goes wonderfully with poultry in cream sauce, light white meats such as roast veal, or delicate dishes like foie gras. On the cheese side, it beautifully complements characterful soft-rind cheeses such as Époisses or blue-veined cheeses.

    Service and storage

    For optimal tasting, it is recommended to serve this great white wine at a temperature between 12 and 14°C. This wine, built for ageing, can be kept in the cellar and will continue to evolve favourably until around 2053.

    The richness of an emblematic terroir in Chassagne-Montrachet

    The estate

    Founded in 1920 by Arsène Amiot, Domaine Guy Amiot et Fils is a historic figure in Burgundy. Located in the heart of the Côte de Beaune, this family estate has managed to preserve its heritage across five generations. Today, Thierry Amiot heads the estate and oversees winemaking, while his brother Fabrice supervises commercial development. The estate stands out for its dedication to winemaking traditions and its deep respect for the terroirs, producing wines that faithfully reflect the identity of their climats of origin.

    The vineyard

    The historic Caillerets plot spans 0.70 hectares within the Chassagne-Montrachet appellation. Located at around 250 metres of altitude on the upper part of the slope, the vines, roughly 75 years old, benefit from a south-west exposure ensuring optimal sunshine. The terroir is characterised by a thin layer of clay resting directly on an outcropping limestone bedrock. The estate favours sustainable viticulture, with regular manual work and controlled yields to encourage berry concentration.

    The vintage

    The year 2023 stood out for its record temperatures, becoming the hottest year on record in the region. The end of August and the beginning of September were marked by intense heatwaves. These particular weather conditions, combined with favourable climatic windows in September, allowed the grapes to reach optimal ripeness at harvest time.

    Winemaking and ageing

    The harvest is carried out exclusively by hand, followed by a rigorous selection of the bunches. Winemaking follows a traditional process with minimal intervention. Malolactic fermentation occurs naturally in the cellar. The wine then undergoes an extended ageing period of eighteen to twenty months in French oak barrels and vats, allowing it to develop its full aromatic complexity.
