    Colour
    The colour reveals a beautiful ruby red hue, with a brightness typical of young wines made from this grape variety.

    Nose
    The aromatic bouquet opens with scents of well-ripened red fruits, evoking cherry, wild strawberry and raspberry. Delicate floral touches of violet intertwine with subtle earthy nuances.

    Palate
    The attack is lively and imbued with freshness. The palate reveals a perfectly balanced structure, supported by lovely natural acidity and supple, fine-grained tannins. The silky, round texture accompanies flavours of juicy red fruits, cranberry and sweet spices. The finish, with a lovely persistence, extends into notes of redcurrant and a fine mineral touch.

    Food and wine pairing

    This red wine pairs wonderfully with classic regional cuisine, particularly roasted poultry or poultry prepared with cream, as well as veal escalopes with mushrooms. It also pairs beautifully with delicate red meats such as filet mignon or herb-crusted lamb chops, fine charcuterie, or forest-inspired dishes like a wild mushroom risotto. As for cheese, it enhances soft cheeses such as Époisses.

    Service and storage

    The Bourgogne Pinot Noir "Cuvée Simone" 2022 offers an optimal tasting window between five and eight years. Stored under good conditions, it can be cellared until around 2032.

    The estate

    Founded in 1920 by Arsène and Flavie Amiot, Domaine Guy Amiot et Fils is a historic institution of Burgundy, established in Chassagne-Montrachet. A pioneer in estate bottling from its very beginnings, this family-run estate stands out for its rich heritage and its environmental commitment, certified at the highest level. Today, the fourth generation, represented by brothers Thierry and Fabrice Amiot, runs the estate. They carry on a tradition combining expertise with modernity, all while paying tribute to the estate's founding women.

    The vineyard

    The grapes come from carefully selected plots, located between Remigny and the lower part of the Chassagne-Montrachet slope. Facing due south to ensure ideal ripening, these vines, with an average age of forty-five years, thrive on rich, deep soils, perfectly suited to this Burgundy appellation. The estate favours environmentally friendly viticulture, certified High Environmental Value, applying the principles of integrated pest management to preserve biodiversity and fruit quality.

    The vintage

    The weather year began with a mild winter, followed by essential rainfall in June. The summer season was then marked by intense heat and a period of drought in July. These unique climatic conditions resulted in a generous, remarkably high-quality harvest, marking the return of a highly favourable year for the region.

    Winemaking and aging

    The creation of the Bourgogne Pinot Noir "Cuvée Simone" 2022 is overseen with rigour, combining contemporary techniques with the region's ancestral know-how. Aging takes place in a cellar with elliptical vaults, architecture specifically designed to provide an optimal natural environment for the wines' maturation.
