Appearance
The wine reveals a bright lemon-yellow hue, a promise of lovely freshness.
Nose
The aromatic bouquet is particularly fragrant. It expresses pure aromas of white fruits, enhanced by a ripe touch of mandarin as well as delicate floral notes reminiscent of acacia and linden.
Palate
The palate offers remarkable mineral tension and a vibrant acidic backbone. This white wine stands out for its purity and clarity, unveiling a fruity substance perfectly supported by minerality. The finish, of exceptional persistence, brings a mouth-watering sensation full of vitality.
Food and wine pairings
This white wine pairs wonderfully with noble pan-fried or grilled fish such as sole and turbot, as well as with shellfish like lobster or langoustine. It also perfectly accompanies white meats, roast poultry, a sweetbread pastry in sauce, or soft cheeses such as Brie de Meaux or Reblochon.
Serving and cellaring
To fully appreciate this Puligny-Montrachet 1er Cru "Les Pucelles" 2024, it is recommended to serve it at a temperature of around 11°C, after decanting for no more than thirty minutes. This wine can be cellared and enjoyed between approximately 2030 and 2036.
The elegance and mineral tension of a great white Burgundy
The estate
Founded in 1885 by the grandfather of the current owner, Domaine Henri Boillot is an essential reference in Burgundy. Located in Meursault, the property extends over approximately 19 hectares of vines spread across prestigious appellations. Today, the estate is run by Henri Boillot, who meticulously oversees the production of the white wines, and his son Guillaume, in charge of the vineyard and the red wines. A pioneer of ultra-sustainable viticulture since the 1990s, the estate stands out for its respectful approach to the soils and its constant pursuit of the purest expression of each terroir.
The vineyard
The Climat from which this wine originates lies in the northern part of the Premiers Crus of Puligny-Montrachet. The estate cultivates around 1.8 hectares of old vines there, some of which were planted in the 1950s and 1960s. The terroir rests on a gentle slope with clay-limestone soils scattered with gravel, providing optimal drainage and giving the wine its distinctive mineral signature.
The vintage
The 2024 growing season was marked by particularly complex weather conditions, with excessive rainfall and strong disease pressure. These climatic challenges led to a drastic drop in yields, making this harvest one of the smallest of its generation. Nevertheless, the vegetative cycle allowed the surviving grapes to reach an exceptional level of concentration while preserving a fine natural acidity.
Winemaking and aging
The manual harvest of this Puligny-Montrachet 1er Cru "Les Pucelles" 2024 is carried out as late as possible to ensure optimal ripeness. After rigorous sorting in the vineyard and then in the cellar, the whole bunches are gently pressed. Fermentation begins thanks to indigenous yeasts. Aging takes place over a period of ten to twelve months in 350-litre oak barrels, a larger format than the Burgundian tradition, chosen to preserve aromatic freshness. The wine then rests in tank or in bottle, without any bâtonnage.
