    Originating from white marl soils, the 2023 Saint-Aubin 1er Cru Derrière Chez Edouard reveals itself aromatically with a bouquet of pear and white flowers, framed by a reductive note attributable to Lamy’s practice of retaining more lees in hot vintages, which accentuates the wine’s reductive character. On the palate, it is medium-bodied, bright and textural, with a crisp core of fruit, racy acidity and a long, chalky finish.

    Colour
    With a lovely pale gold hue, the wine reveals a remarkable luminous intensity.

    Nose
    The aromatic bouquet opens with a great purity of citrus, blending lemon zest, mandarin and grapefruit. It is then enriched by delicate white flower scents and a mineral backbone marked by chalk and wet stone, all underlined by a hint of salinity.

    Palate
    The palate stands out for its tension and energy, offering a fine texture of great precision. The naturally balanced acidity carries a pronounced minerality and a vibrant freshness. A saline sensation runs through the mid-palate before stretching into a long, persistent finish, dominated by nuances of stone fruit.

    Food and wine pairing

    This wine pairs wonderfully with seafood such as oysters, scallops or lobster served with a light butter sauce. It also enhances white-fleshed fish like sole meunière, as well as citrus-roasted poultry or an artisanal goat's cheese.

    Service and storage

    To fully appreciate this great white wine, it is recommended to serve it at a temperature between 10 and 12°C. This wine can be enjoyed with great pleasure until around 2038.

    The estate

    Officially founded in 1973 by Hubert Lamy, although the family's winemaking heritage dates back to 1640, Domaine Hubert Lamy is a key reference in Burgundy. Located in Saint-Aubin, the estate now spans 18.5 hectares. Under the visionary direction of Olivier Lamy, who has been at the helm since the mid-1990s, the estate has distinguished itself through innovative viticultural practices, notably high-density planting. Guided by a minimal-intervention philosophy, the estate produces wines of remarkable precision that faithfully reflect the richness of their terroirs.

    The vineyard

    The plot from which this wine originates spans 1.68 hectares within the Saint-Aubin appellation. Facing due east, the vines benefit from ideal morning sunshine while preserving a lovely freshness. The terroir is characterised by shallow, very stony soils, made up of a thin layer of clay resting on a limestone base. This distinctive geology forces the root system to dig deep into the chalky rock. The vineyard is farmed according to sustainable viticulture principles, with mechanical soil tilling and rigorous manual budding.

    The vintage

    2023 proved to be particularly favourable, offering mild weather conditions throughout the growing cycle. This generosity from nature made it possible to achieve an abundant harvest and optimal ripeness for the grapes, ensuring perfect balance.

    Winemaking and aging

    The grapes are hand-harvested in small crates, followed by careful sorting. After gentle crushing and pressing, the must is left to settle overnight before undergoing spontaneous fermentation with indigenous yeasts. Aging takes place on the lees for an average of 24 months, mainly in 300- and 600-litre barrels, with a very small proportion of new oak. The wine then rests for an additional six months in stainless steel tanks before bottling with minimal filtration and fining.
