Characteristics and Tasting Tips for the Saint-Romain Village 2025 from Jean-Charles Fagot

    Tasting notes

    Colour
This Saint-Romain Village 2025 shows a pale gold hue with slightly greenish nuances, characteristic of white Chardonnay wines crafted on the hillsides of the Côte de Beaune.

    Nose
The nose opens with delicate floral notes, carried by the freshness that comes from the vineyard's high-altitude setting, while also hinting at a subtle mineral touch typical of marl-limestone terroirs.

    Palate
On the palate, this Saint-Romain Village 2025 reveals a beautiful saline tension, supported by an aromatic finesse that faithfully reflects the character of the terroir from which it comes. The balance between freshness and body gives this dry white wine an impression of purity and elegance.

    Food and wine pairings
This dry white wine pairs well with fish and poultry in a light sauce, as well as with fresh goat's cheese, which highlights its saline tension and aromatic finesse.

    Serving and cellaring
The Saint-Romain Village 2025 from Jean-Charles Fagot is ideally enjoyed between 11 and 13°C, in order to fully preserve its freshness and aromatic finesse.

A taut, saline Saint-Romain Village, true to its high-altitude terroir

    The estate
Founded in 1920 in Corpeau, in Burgundy, the Jean-Charles Fagot estate is now run by Jean-Charles Fagot, who is also the owner of the Auberge du Vieux Vigneron. The estate covers approximately 3 to 4 hectares, supplemented by purchased grapes. Vineyard management is based on lutte raisonnée (sustainable, reasoned viticulture), with hand-harvesting and traditional vinification in wooden foudres, reflecting a strong artisanal heritage in the Côte de Beaune.

    The vineyard
The Saint-Romain that makes up this cuvée comes from a vineyard located in the Côte de Beaune, on marl-limestone soils. Its high-altitude setting gives the vines a pronounced saline tension as well as an aromatic finesse characteristic of this part of the appellation.

    Vinification and ageing
The grapes for the Saint-Romain Village 2025 are hand-harvested, then vinified using a traditional method in wooden foudres, in keeping with the estate's philosophy based on lutte raisonnée.

    Grape variety
    100% Chardonnay.
