Tasting
Appearance
The color stands out for its remarkable brightness, adorned with slightly coppery salmon hues. The effervescence unfolds gracefully while a sparkling brilliance enhances the whole.
Nose
The aromatic bouquet reveals a palette of red and black berries, elevated by floral notes of peony and violet. The olfactory expression becomes more complex with ripe fruits such as blueberry and cherry stones, accompanied by fragrant roses and iodized sea spray that bring a maritime dimension.
Palate
The attack reveals power that is both measured and delicate. The palate blossoms with gourmet, patisserie-like flavors evoking cherry clafoutis, Canada apple, and blood orange jelly. The delicate structure gradually evolves toward a finish marked by a hint of chalk and notes of Corsican clementine zest, offering a pronounced mineral dimension.
Food and wine pairings
This rosé champagne is an ideal match for Bresse poultry with crayfish as well as Brittany royal langoustines served with a saffron sabayon. Its mineral structure and finesse also make it a top choice for noble shellfish and delicate fish.

The estate
Founded in 1818 by Nicolas-François Billecart and Élisabeth Salmon, Billecart-Salmon remains one of the few family-owned, independent Champagne houses. Mathieu Roland-Billecart, representing the seventh generation, has led the house since 2019, supported by cellar master Florent Nys. The House combines two centuries of tradition with modernity while preserving its distinctive style of excellence recognized worldwide.
The vineyard
The Billecart-Salmon vineyard stretches from the Côte des Blancs to the Montagne de Reims across nearly 100 hectares. The vines are cultivated and tended using traditional methods to capture authentic fruit and reflect the quality of these great Champagne terroirs.
The wine
Created in 1988, this Elisabeth Salmon cuvée is a true tribute to the House’s co-founder. The spirit of this remarkable woman is found in a champagne with a unique character and unparalleled brilliance and purity.
This 2013 vintage champagne is crafted from Grands Crus in Oger, Cramant, Le Mesnil-sur-Oger, Mareuil-sur-Aÿ, Aÿ, and Bouzy.
Winemaking and aging
Cuvée Élisabeth Salmon Rosé 2013 underwent partial barrel fermentation at 5%. Aging on lees in the cellar extended over 115 months, allowing the champagne to develop its aromatic complexity and refined texture. Less than 10% of the Pinot Noir was vinified as red wine, sourced from old vines in Mareuil-sur-Aÿ with full southern exposure. The dosage of this Rosé champagne is 4.4 g/L.
