Nose
The nose reveals fine aromatic complexity, blending citrus notes such as lime zest and orange peel with hints of white flowers and acacia. Aromas of pear and apple intertwine with a pronounced minerality reminiscent of wet stone and oyster shell, rounded off by subtle spicy notes.
Palate
On the palate, the wine offers ample body and deep concentration, underpinned by lively acidity. The structure is distinctly mineral and chalky, enhanced by a hint of white pepper, extending into a persistent, clean and dry finish.
Food and wine pairing
This white wine pairs perfectly with seafood such as oysters or shellfish, as well as with firm-fleshed fish served with a beurre blanc sauce. It will also beautifully complement white poultry or a creamy risotto.
Service and storage
To fully appreciate the Saint-Aubin 1er Cru "Derrière chez Edouard" 2020, it is recommended to serve it at a temperature between 12 and 14°C, taking care to decant it while young. Built for aging, it can be enjoyed from 2026, but will reach its peak between 2030 and 2060 approximately.

The estate
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is a leading name in Burgundy, located at the heart of the Saint-Aubin appellation. Now run by his son, Olivier Lamy, who joined the estate in 1995, the property spans 18.5 hectares across around twenty appellations. Renowned for his hands-off approach and environmentally conscious practices, Olivier Lamy has established the domaine as one of the region's benchmarks. The vineyard is predominantly planted with Chardonnay, authentically reflecting the richness of the local terroirs.
The vineyard
This wine comes from the plot classified as premier cru "Derrière chez Edouard", located on the heights above the village of Saint-Aubin. This terroir stands out for its steep east-facing slope and very shallow soils, resting on a limestone bedrock. The distinctive feature of this vineyard lies in its very high planting density, reaching up to 30,000 vines per hectare, a demanding method that encourages deep rooting. The Chardonnay vines here are pruned using the Guyot Poussard method.
The vintage
The year 2020 was characterized by a mild winter that led to particularly early bud break in the vines. The summer season was then marked by intense heat and a historic drought, the most severe since 1945. Despite these extreme conditions and limited yields, the harvest, which began very early at the end of August, produced berries with excellent tartaric acidity, offering an unexpected balance between freshness and concentration.
Winemaking and aging
The making of the Saint-Aubin 1er Cru "Derrière chez Edouard" 2020 is based on a philosophy of minimal intervention. After gentle pneumatic pressing and an overnight settling period, fermentation proceeds slowly with indigenous yeasts. Aging takes place on the lees for 12 to 24 months in large-format barrels, with a very small proportion of new oak, accompanied by occasional lees stirring. The wine then rests for six months in stainless steel tanks before bottling.
