Appearance
Clear and brilliant, this wine reveals a delicate pale yellow hue.
Nose
Beautifully complex, the nose releases aromas of candied citrus, fresh butter and sweet spices. It stands out for its well-controlled reduction, reminiscent of the Meursault style, enriched by notes of white pepper and an abundant mineral and floral backbone.
Palate
Taut and sappy, the palate offers a vibrant structure. It charms with its great savouriness and precise balance, stretching elegantly into a finish of mouthwatering persistence.
Food and wine pairings
This white wine pairs perfectly with haute gastronomy dishes, such as a lobster medallion served with a savagnin sabayon. It is also a wonderful match for fine oven-baked fish, shellfish and seafood dishes with creamy sauces.
Serving and cellaring
To fully enjoy Les Saugettes Chardonnay 2024, we recommend serving it at a temperature between 11 and 12°C, decanting it for about 45 minutes while it is young. This wine can be enjoyed now, but it will continue to evolve favourably until around 2038.
A Jura chardonnay with mineral tension and Burgundian elegance
The estate
Founded in 2016 in France, Pierre Girardin is now run by its current owner, Pierre-Vincent Girardin, who comes from the thirteenth generation of a winemaking family. Based in Meursault, the estate farms approximately 6.5 hectares in Burgundy and 6.2 hectares in the Jura. Quickly recognised as an essential reference, the house stands out for its philosophy of respect for the living world and its highly precise winemaking. Domaine Pierre Girardin perfectly illustrates the transmission of historic expertise combined with a resolutely modern vision of viticulture.
The vineyard
Although classified as Vin de France, this cuvée comes from a small plot in the lieu-dit Grusse, in the Jura. Planted around 1970, these old vines benefit from a west to south-west exposure on limestone marl soils. The vineyard, currently undergoing organic conversion, is managed with limited yields to promote concentration in the berries.
Winemaking and ageing
After hand harvesting, the fermentation of Les Saugettes Chardonnay 2024 is carried out with whole bunches and indigenous yeasts. The wine is then vinified and aged for an extended period on the lees in 456-litre oak demi-muids. To preserve the pure expression of the terroir, bottling is carried out without fining or filtration.
