Characteristics and Tasting Tips for the Coing 2012 from Rochelt
Tasting
Appearance
Limpid and perfectly clear, this eau-de-vie displays the crystalline brilliance typical of spirits matured for a long time in glass demijohns. Its appearance bears witness to a natural purity, preserved by the complete absence of filtration.
Nose
Remarkably fine, the bouquet is calm and classic. It unfolds fresh, fruity aromas, subtly enhanced by spicy notes in which a delicate and elegant touch of cumin stands out.
Palate
The structure is at once fine and firm, carried by a lively, racy acidity. The fruit expresses itself with remarkable clarity, wrapped in a spicy, piquant body that reveals complex nuances of pepper and nutmeg. The whole offers a masterful balance.
Pairings and Tasting Moments
Designed for contemplative sipping, this exceptional eau-de-vie is best enjoyed neat. To appreciate its full aromatic complexity and enjoy its balance, it is recommended to serve it at a temperature between 18 and 20 °C.
Mixology
An exceptional spirit made for contemplation, it is not intended for mixology. It is strongly recommended to savour it neat, without any artifice, in order to honour the rarity of its fruit and its thirteen years of maturation.
Rochelt: A Tyrolean Quince Eau-de-Vie of Absolute Precision
The Rochelt Family Distillery: Tyrolean Excellence
Officially founded in 1989 by Günter Rochelt after years of passionate experimentation, the Rochelt distillery is located in Fritzens, in Tyrol. This small artisanal workshop has profoundly transformed the world of Austrian eau-de-vie by imposing a radically quality-driven production philosophy. The estate is distinguished by its selection of fruit at extreme ripeness, natural fermentation without additives and slow double distillation in copper pot stills. Today, the property remains strictly independent and family-owned. It is run with rigour by Alexander Rainer, the founder's son-in-law, supported by his wife Annia, as well as Julia, Teresa and Daniela Rochelt. Together, they perpetuate this extraordinary expertise, systematically favouring quality over quantity, with extended ageing in glass demijohns to offer spirits of unrivalled purity.
The Coing 2012: The Masterful Expression of the Ronda Variety
The Coing 2012 perfectly illustrates the uncompromising standards of the Tyrolean house. This fruit Eau-de-vie is made exclusively from the ronda variety, a pear-shaped quince covered in a fine down, rigorously selected in Upper Austria. To capture an intense aroma of exotic fruits, the fruits are left on the tree until the end of October, benefiting from the crucial alternation between warm autumn days and cool nights to reach optimal ripeness.
The production method demands the highest precision. After meticulous sorting, the fruit purée ferments naturally thanks to indigenous yeasts alone. This is followed by a slow, gentle double distillation in copper pot stills. The yield is extremely low, testifying to an extraordinary aromatic concentration: up to 80 kilograms of quinces are needed to obtain a single litre of heart of the distillate.
Finally, this vintage distillate from the 2012 harvest has benefited from an exceptional thirteen-year maturation in glass demijohns. This long rest allows the alcohol and aromas to blend harmoniously without any influence from wood, resulting in a rare, unfiltered spirit that captures the very essence of its terroir.
