Tasting
Colour
A deep ruby colour, this wine is enhanced by violet hues typical of its youth.
Nose
Elegant and complex, the bouquet opens with aromas of black fruits such as cherry and blackcurrant. It then evolves towards secondary notes of fine leather and undergrowth, along with subtle spicy and smoky touches.
Palate
The attack reveals a present, enveloping tannic structure, supported by a lovely acidity that brings freshness. The palate unfolds concentrated flavours of plum and black cherry, enriched by a mineral tension and earthy nuances. The long, persistent finish reveals notes of liquorice, damp earth and black truffle.
Food and wine pairing
This red wine pairs beautifully with full-flavoured meats. It will enhance a beef bourguignon, roasted or sauced game (duck, venison, pheasant), as well as dishes featuring wild mushrooms such as porcini or morels. It also pairs very well with charcuterie boards and strong, ripened cheeses such as époisses, langres or an aged comté.
Service and storage
To fully appreciate the complexity of this Pommard 2023, it is recommended to serve it at a temperature of between 14 and 16°C, taking care to decant it or open it well ahead of tasting. With great potential, this wine will reach its peak between 2027 and 2035, and can be cellared until around 2040 under optimal conditions.
The authentic and structured expression of a Pommard wine
The estate
Founded in 1980 with two hectares in Santenay, the house of Vincent Girardin is a benchmark name in Burgundy. Now based in Meursault and owned by Compagnie des Vins d'Autrefois (chaired by Jean-Pierre Nié), the estate retains its original philosophy. Under the technical direction of Eric Germain, the estate stands out for its biodynamic viticulture and minimal-intervention winemaking, which reveals the purity of its terroirs. This commitment earned the house the title of "Négociant of the Year 2023" from La Revue du Vin de France.
The vineyard
The grapes come from the "Vaumuriens" lieu-dit, located on the north-facing slope of the village of Pommard, towards Volnay. This steep terroir is characterised by heavily clay-rich soils dotted with limestone outcrops and rich in iron oxide. The vines, 45 years old, develop deep root systems to draw up nutrients. Farmed according to biodynamic principles, without herbicides or insecticides and with only surface ploughing, this demanding vineyard forces the vines to struggle, encouraging lower yields but an exceptional concentration in the berries.
The vintage
2023 proved to be a particularly hot year, even surpassing the temperatures of the previous year. These extreme weather conditions required great vigilance in the vineyard. To preserve the freshness and natural acidity of the grapes in the face of this intense heat, harvesting began early, from the start of September.
Winemaking and aging
After manual harvesting and rigorous sorting, the berries for this Pommard 2023 are destemmed and very lightly crushed. A cold maceration at around 12°C precedes fermentation in stainless steel tanks, triggered by indigenous yeasts. Gentle punching down and pumping over are carried out during the two to three weeks of vatting. The wine is then transferred to barrel for its natural malolactic fermentation. Aging takes place on fine lees for around 15 months in French oak barrels (30% new). The final blend is assembled in tank one month before bottling, which is carried out according to the lunar calendar, with light fining and gentle filtration.
