Description
The mineral elegance and finesse of a Volnay wine
The estate
Established in Burgundy since 1980, Maison Vincent Girardin was born thanks to a nineteen-year-old winemaker starting out with just two hectares. Now based in Meursault, the estate spans 32 hectares of vines cultivated according to biodynamic principles. Currently led by its president, Jean-Pierre Nié, with the technical expertise of Eric Germain, the estate stands out for its minimalist approach in the cellar. This philosophy aims to convey, with the utmost fidelity, the pure and mineral expression of the limestone terroirs of the Côte de Beaune.
Winemaking and aging
Hand-harvesting in small crates precedes several days of cold maceration. Alcoholic fermentation begins naturally through indigenous yeasts, accompanied by gentle punching down and pumping over that respect the fruit. After gentle pneumatic pressing, this Volnay is transferred into French oak barrels, about 30% of which are new. Malolactic fermentation occurs spontaneously within the barrels. Aging on fine lees lasts fourteen to sixteen months. Finally, the wine is blended in tank before being bottled by gravity, timed according to the lunar calendar, without fining and with minimal filtration.
