    The Estate

    Founded in 1831 by Bernard Bichot in Monthélie, the House of Albert Bichot embodies a family winemaking tradition with roots dating back to 1350. Based in Beaune since 1912 and currently managed by Albéric Bichot, the company manages six estates across Burgundy spanning over 100 hectares of vineyards, including 13 hectares of Grand Crus. A pioneer in organic viticulture, Albert Bichot distinguishes itself through its commitment to heritage as a founding patron of the Cité des Climats et Vins de Bourgogne.

    The Vineyard

    The Les Vaucopins climat is located on the right bank of the Serein in the commune of Chichée, approximately 3 kilometers southeast of Chablis. This exceptional terroir boasts remarkable characteristics, including a pure south-facing exposure and a very steep slope. The predominantly limestone soils rest on Kimmeridgian marl with numerous outcrops of this fossilized limestone, which imparts an archetypal minerality to the wines. Domaine Long-Depaquit, now owned by the House of Albert Bichot, manages 5.20 hectares in this prestigious location. The vines are 30 years old on average.

    Winemaking and Aging

    Harvesting is done by hand, followed by grape sorting and slow pressing at moderate pressure. Alcoholic fermentation and aging on fine lees for the Chablis Premier Cru "Les Vaucopins" Domaine Long-Depaquit 2023 take place over 10 months in stainless steel tanks (85%) and oak barrels (15%) (1 to 4 wines). An additional 2 months of aging in stainless steel tanks precedes bottling.
