    Disgorged in October 2020 with seven grams per liter dosage, the 2008 Brut Blanc de Blancs Cuvée Louis Salmon is showing beautifully, unfurling in the glass with scents of crisp yellow apple and stone fruits mingled with dried white flowers, freshly baked bread, buttery pasty and mandarin oil. Full-bodied, ample and fleshy, it's a textural, racy, penetrating wine endowed with considerable cut and concentration. It's derived from the villages of Cramant, Mesnil-sur-Oger and Chouilly, with the latter accounting for some 40% of the blend.

Creamy and delicious fruit here, yet it’s mineral and refined with very fine, precise bubbles. Structured, with a sharp, persistent backbone of acidity. Long and very focused.     The 2008 Champagne Blanc de Blancs Louis Salmon Brut spent 12 years resting on its lees before release, with 7 grams per liter of dosage, and was disgorged in May of 2021. A medium straw with vibrant yellow color, it is a bit reserved initially on opening, but the nose unfolds to a layered and decadent bouquet with lemon curd, custard, green apple, and dusty earth. As it opens, it reveals more spiced notes that resonate on the palate, with graham crust, orange zest, and a bit of smoke. The texture is supple and inviting, with a long and expressive finish. Drink 2023-2038.

    The elegance and minerality of a vintage Brut champagne

    The property

    Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.

    The vineyard

    The vineyard of the Billecart-Salmon house extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way in order to get closer to an authentic fruit and reflect the quality of the Champagne terroir.

    The wine

    The work of a passionate historian has allowed to find archives reporting the numerous works carried out by Louis, brother of Elisabeth Salmon, in the elaboration of the first cuvées of the house. The Cuvée Louis Salmon Blanc de Blancs 2008 from Billecart-Salmon is made from grapes harvested from the best Grands Crus of the Côte des Blancs: Chouilly (40%), Cramant (33%), Mesnil-sur-Oger (20%) and Avize (7%).

    Vinification and aging

    Vinification is carried out, for 33% of the wines, at low temperature in oak barrels aged 15 years on average. The dosage of this 2008 vintage champagne is 7 g/l.

    Tasting

    Color
    Crystalline, the color is of a beautiful pale gold, adorned with subtle yellow and green reflections. The effervescence is bright and persistent.

    Nose
    Elegant and complex, the nose opens on fragrances of yellow fruits and citrus (candied mandarin, limoncello, conference pear). As the wine breathes, pure and crystalline aromas (cedar, raw butter) conferred by the chalky soil of the house's terroirs are revealed.

    Palate
    Precise, the palate seduces with its creamy touch and its finesse. The balance and power of the palate combine with a rich aromatic palette (citron zest, almond biscuit, white pepper). With a beautiful persistence, the finish exhales aromas of sweet citrus flesh, cardamom and vanilla cabbages.

    Food and wine pairings

    With its purity and precision, the Cuvée Louis Salmon Blanc de Blancs 2008 from Billecart-Salmon ideally pairs with whole Corrèze sweetbreads in a casserole or a creamy shellfish risotto.

    Service and aging

    For optimal tasting, serve between 10 and 12°C. This cuvée can wait in cellars for more than 10 years.
