    Disgorged during the second quarter of 2022 with a dosage of 3.75 grams per liter, the 2009 Brut Blanc de Blancs Cuvée Louis Salmon reveals aromas of pear, lemon oil, mandarin oil, white pepper, pastry and almonds. Medium to full-bodied, chiseled and long, it has a crystalline yet vinous texture with a fresh, salty finish. It is a quintessential representation of Billecart's style, characterized by racy acids and a lively palate. It derives from Chardonnay grapes sourced from the villages of Mesnil-sur-Oger, Chouilly and Cramant and was aged exclusively in steel tanks.

Fantastic complexity and all in balance, with firm focus yet open and delicious. Creamy, very fine bubbles. Salty, turning chalky and mineral at the end. Drink or hold.

    100% Chardonnay from grands crus of the Côtes des Blancs: 21% Chouilly, 58% Cramant, 21% Mesnil-sur-Oger. Dosage 3.75 g/l. Partial malo. 100% vinification in tank before 144 months' ageing on lees. This is certainly not austere but there's not much sign of the richness of the vintage either. This is still extraordinarily taut for a 14-year-old wine. Dense and set for the long term. Very tightly wound – so don't serve this too cold. It deserves to unwind a bit and show its nuance and lacy delicacy – it should to be left to open out in the glass. Admirably persistent. (JR)

    The 2009 Brut Blancs de Blancs Louis Salmon is a rich, heady wine. In 2009, Billecart-Salmon opted not to use lots aged in oak, which, along with partially blocked malolactic fermentation, helps explain the wine's freshness and verve. Lemon peel, white flowers, white pepper and chalk are all beautifully delineated. There's gorgeous density and power here, along with a good bit of vintage 2009 radiance. What a gorgeous Champagne this is. The Louis Salmon is a blend from Mesnil-sur-Oger, Chouilly and Cramant. Dosage is 3.75 grams per litre. Disgorged: second trimester 2022.

    The 2009 Champagne Blanc De Blancs Louis Salmon Brut comes from Mesnil, Cramant and Chouilly and was all fermented in stainless steel tank. Since 2009 was a warmer vintage, they did not use wood, as they were looking to preserve the freshness of the wine. A seductive wine that’s almost identical in appearance to the 2017 Blanc de Blancs, this 2009 jumps from the glass with a buoyant personality in its perfume of lemon custard, honeysuckle, fresh brioche, a hint of almond, and juicy pear. Full-bodied, its wonderfully rich texture coats the palate with citrus oils, and it has a finish that won’t quit. It balances its warmth and solar feel with a lovely embrace and retains a powerful yet balanced finish. Drink 2024-2040. 3.8 grams per liter dosage.

    A lovely brioche-like palette with dried fruits and cereal notes. The expression is beautifully ripe and generous. The palate is broader and the style differs from the 2008 vintage. This is a comfortable Blanc de Blancs with chew and a spherical sense of volume. The juice is full, with lovely harmony.

    The property

    Since its creation in 1818 by the couple Elisabeth Salmon and Nicolas-François Billecart, the Champagne House Billecart-Salmon has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.

    The vineyard

    The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way to approach an authentic fruit and reflect the quality of the Champagne terroir.

    The wine

    This bottle pays tribute to Louis, Elisabeth Salmon's brother, a passionate oenologist deeply involved in the development of wines, from the creation of the property. The Cuvée Louis Salmon Blanc de Blancs 2009 translates the expression of the best plots of Grands Crus from the Côte des Blancs: Cramant and Mesnil-sur-Oger for structure and longevity.

    Vinification and aging

    Vinification is carried out in stainless steel tanks. Maturation on lees in the house's underground cellars is for a period of 12 years. The dosage of this vintage champagne 2009 is 3.75 g/l.

    Color
    The color displays a pale gold color with shades of yellow and green, of remarkable brilliance.

    Nose
    Elegant and complex, the nose opens on fragrances of hazelnut and citrus pulp (mandarin, yuzy) and syrupy pear. As the wine breathes, pure and crystalline aromas (raw butter and fresh honey) conferred by the chalky soil of the House's terroirs are revealed.

    Palate
    Precise, the palate seduces with its creamy touch and its chiseled finesse. The balance and power of the palate combine with a rich aromatic palette (almond paste, flaky brioche, white fruits and white pepper). With a beautiful persistence, the finish exhales aromas of fresh mango, caviar lemon and cardamom.

    Food and wine pairings

    With its purity and precision, the Cuvée Louis Salmon Blanc de Blancs 2009 from Billecart-Salmon ideally pairs with Corrèze sweetbreads or a creamy shellfish risotto.

    Service and aging

    For optimal tasting, serve between 10 and 12°C. This cuvée can wait in cellars for more than 10 years.
