The estate
Founded in 1981 in Reims, the House of Bruno Paillard stands out for its independence and rigour. This family-owned estate produces wines renowned for their purity, minerality and very low dosage. Driven by a spirit of innovation, the estate quickly won over connoisseurs, all while championing sustainable viticulture and a deep respect for its chalky terroirs.
The vineyard
The estate spans prestigious chalky terroirs of Champagne, including the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne. Cultivated according to sustainable principles, the vineyard is tended with particular attention to soil tillage to encourage deep rooting into the chalk.
Winemaking and ageing
Made exclusively from the first pressing, the "Assemblage" 1989 cuvée embodies the very essence of its harvest year. True to the house style, the winemaking process includes extended ageing on lees, followed by a rest period in bottle after disgorgement. The dosage is kept very low, highlighting the tension and energy of this cuvée.
