    Tasting

    Appearance

    With its bright golden hue, the wine shows a lively, fine bead with crystal-clear bubbles.

    Nose

    The bouquet opens on fresh notes of pear and citrus, suggesting sweet orange and grapefruit. As the champagne warms in the glass, indulgent aromas of Bourdaloue tart emerge, combining pear and almond.

    Palate

    The palate stands out for its structure and depth, offering a remarkable balance between tension and density. The attack reveals citrus and vanilla blossom, before evolving into notes of gooseberry, raspberry, and red cherry with yellow flesh.

    Food and Wine Pairing

    This champagne is an ideal match for exotic cuisine, with dishes such as plantain banana, veal with pineapple, pork with prunes, or chicken skewers with lemongrass. It also pairs perfectly with fine fish such as monkfish tail, sea bass baked in a salt crust, or steamed fish. For dessert, opt for a fresh fruit salad or an apricot and basil tart. This cuvée is equally enjoyable as an aperitif or throughout a meal.

    The Estate

    Founded in 1584 in Aÿ, Gosset continues an ancestral savoir-faire. This iconic House remains one of the oldest in Champagne. Family-owned and independent, it has upheld a tradition of excellence for more than four centuries, crafting wines that are vinous, intense, and balanced. The House’s distinctive signature lies in extended aging on fine lees and an approach that respects the wines’ natural character, without malolactic fermentation.

    The Vineyard

    This exceptional cuvée comes from a rigorous selection of grapes sourced from the region’s most prestigious villages: Ambonnay, Avenay, Avize, Aÿ, Bouzy, Cuis, Cramant, Grauves, Le Mesnil-Sur-Oger, Louvois, Trépail, and Villers-Marmery. These Grands Crus and Premiers Crus terroirs of Champagne offer optimal conditions for expressing the Chardonnay and Pinot Noir varieties.

    The Vintage

    The 2012 vintage represents only the ninth edition of Celebris over the past thirty-five years, reflecting the exceptional nature of this cuvée, which is produced only in the most remarkable years.

    Vinification and Aging

    Celebris Vintage Extra Brut 2012 is vinified and aged in stainless-steel tanks, without malolactic fermentation, in order to preserve the integrity of its natural aromas. Bottled in late April 2013, at the end of the spring following the harvest, this champagne benefited from a minimum of ten years of aging in the cellars. After disgorgement, the bottles return to the cellars for an additional rest of at least nine months, allowing the aromas to integrate in perfect harmony.
