Description

The precision of a Grand Cru Classé de Saint-Émilion

The estate

It was in 2014 that Sylvie Cazes and her children acquired Château Chauvin. Building on the work carried out by the Ondet family, the Cazes family has devoted all their energy and viticultural expertise to this Grand Cru Classé de Saint-Émilion. Since the 2014 vintage, the Château Chavin has been adorned with a new label, inspired by the one published in 1929 whose design captivated Sylvie Cazes. Cupid, the god of Love, is thus depicted, bearing a banner on which the emblematic Saint-Émilion lion is represented. This label thus pays tribute to the symbolism of Château Chauvin’s terminology, signifying "to be in love with one’s land".

The vineyard

The vineyard of Château Chauvin is located in the northwest of the town of Saint-Émilion. The estate enjoys an exceptional location between Château Cheval Blanc and the Butte de Roi. The vineyard spans 15 hectares of vines averaging 30 years old, planted on sandy-clay soils with a significant presence of iron pan over clay subsoils. The Château Chauvin vineyard benefits from HVE level 3 certification (High Environmental Value).

The vintage

2018 undoubtedly stands among the great vintages of the Grand Cru Classé de Saint-Émilion. A vintage marked by strong climatic contrasts, 2018 recalls the exceptional 2015 and 2016.

Despite strong fungal pressure until mid-July, Château Chauvin was spared thanks to its geographical location promoting good vine ventilation. The technical teams’ constant vigilance and expertise ensured the vineyard remained in excellent sanitary condition. The fine weather in August and September then guaranteed optimal grape ripening, resulting in grapes with excellent coloring potential and exceptional aromatic freshness.

Winemaking and ageing
Cold pre-fermentation maceration for 2 to 5 days at around 8°C. Alcoholic fermentation in temperature-controlled stainless steel vats. Malolactic fermentation in barrel. Maceration for 20 to 30 days. Gentle and slow extraction. Aged for 15 to 18 months in French oak barrels (60% new).

Blend
Merlot (85%), complemented by Cabernet Franc (12%) and Cabernet Sauvignon (3%).
