Tasting
Appearance
The wine displays a deep, intense red hue enhanced by delicate raspberry highlights.
Nose
The powerful, seductive nose reveals a generous bouquet of black fruits—especially blackberry and blackcurrant—along with plum and cherry notes. A touch of vanilla and oak, resulting from brief ageing in barrels, enriches this aromatic palette.
Palate
On the palate, this wine shows a fine structure supported by supple, perfectly integrated tannins. Its rounded texture coats the mouth, while balanced acidity brings freshness. The overall impression is one of power and complexity, leading into a fruity finish with lightly spicy nuances.
Food and wine pairings
This alcohol-free wine is an ideal match for an entrecôte à la Bordelaise or an Australian “meat and three veg” pie. It also pairs beautifully with a red mullet terrine with pink peppercorns, a tomato tartare with red pesto, or an Échourgnac Trappist cheese. For a more original touch, it elevates a strawberry and pomegranate salad.
Serving and cellaring
Cabernet & Merlot Chavin should be tasted at a temperature between 9 and 11°C. This wine can be cellared until around 2027.

The estate
Founded in 2010 by Mathilde Boulachin and Fabien Gross, the House of Chavin has established itself as an innovative wine merchant based in Béziers. Chavin has around 50 hectares of organically farmed vineyards and stands out for its specialization in premium alcohol-free wines.
The vineyard
This alcohol-free wine is made from organically grown vines in Occitanie. The Cabernet and Merlot grape varieties thrive in this Mediterranean terroir and benefit from a climate conducive to optimal ripening.
Winemaking and ageing
Cabernet & Merlot Chavin is produced using a low-temperature vacuum distillation method. This innovative process preserves the wine’s original quality as well as the integrity of its natural aromas. Brief ageing in barrels provides subtle vanilla and oak notes, with no added artificial flavors.
