Tasting
Color
The color reveals a deep ruby red with violet highlights, reflecting vibrant youth and lovely freshness.
Nose
The bouquet opens with aromas of red fruits, notably cherry and raspberry, accompanied by subtle spicy and floral notes. Hints of dark tobacco and coffee enrich the aromatic palette.
Palate
The palate charms with its velvety texture and lively acidity, which harmoniously balances the fruit’s natural sweetness. The finish stands out for its lingering lightness and radiant freshness.
Food Pairing
This alcohol-free Pinot Noir pairs beautifully with chicken quesadillas, a traditional pot-au-feu, or roasted eggplant with mushrooms. It also goes well with Peking duck, beef carpaccio with mild mustard, or Saint-Nectaire cheese.
Serving and Cellaring
To fully enjoy the Chavin Pinot Noir 2023, it is recommended to serve it at 8 to 10 °C. Cellaring until around 2026.

The Estate
Founded in 2010 by Mathilde Boulachin and Fabien Gross, Chavin has established itself as an innovative merchant house in Béziers. With around fifty hectares of organically farmed vineyards, Chavin stands out for its specialization in premium alcohol-free wines.
The Vineyard
This alcohol-free beverage comes from Pinot Noir vines grown in Occitanie, in the south of France. Farmed according to organic principles, the vineyard benefits from a Mediterranean climate that promotes optimal grape ripening.
Winemaking and Aging
The Chavin Pinot Noir 2023 is produced using a low-temperature vacuum distillation process. This method makes it possible to preserve the wine’s quality and original aromas while removing the alcohol. No flavors are added during the process.
