Characteristics and Tasting Tips for Trousseau à la Dame Le Mont Royal 2025 from Domaine Grand
Food and Wine Pairings
This red wine pairs beautifully with full-flavoured meats such as braised beef or veal with mushrooms, as well as game such as duck or wild boar. It also goes well with umami-rich dishes featuring truffle, porcini mushrooms or mature Parmesan, and can be a pleasant surprise alongside an oily fish such as smoked salmon.
A Trousseau from the Côtes du Jura, rooted in the variegated marls of Passenans
The estate
Based in Passenans, in the heart of the Côtes du Jura, Domaine Grand carries on a family winemaking tradition dating back to 1692. Since 2015, Emmanuel and Nathalie Grand have run the estate and have chosen to reduce the size of the vineyard in order to convert it entirely to organic farming, certified in 2021. This qualitative reorientation, described as a true second birth, relies on precision viticulture and low-intervention winemaking, designed to reveal the distinctiveness of the Jura terroirs.
The vineyard
This single-plot cuvée comes from the Grandvaux hillside in Passenans, under the Côtes du Jura appellation. The Trousseau vines, some of which are over a hundred years old, root deeply in variegated marls, clay soils marked by variations in colour caused by the presence of oxides. This mineral structure, combined with good water retention, allows the roots to draw nutrients from deep down and contributes to the wine's density. The vineyard is farmed organically, with hand harvesting and close attention paid to the vine's cycle and to soil life.
Winemaking and ageing
For Trousseau à la Dame Le Mont Royal 2025, the grapes undergo rigorous sorting before being vinified in a traditional manner. This Trousseau à la Dame is then aged in old barrels, a choice that limits the aromatic influence of new oak while encouraging a slow stabilisation of the tannins. This approach, designed for minimal intervention and low sulphur levels, continues the style the estate has developed since its conversion to organic farming.
