    Tasting

    Colour
    The colour reveals a hue ranging between pale yellow and golden yellow, enhanced by brilliant highlights.

    Nose
    Highly expressive from the outset, the bouquet intensely reveals aromas of white-fleshed fruit alongside delicate floral notes reminiscent of hawthorn. A pronounced mineral thread, evoking limestone and gunflint, underscores the whole.

    Palate
    The attack is full and generous, introducing a complex mid-palate where fruity and mineral flavours intertwine. With a silky texture and perfectly integrated acidity, this wine offers a superb balance between roundness and tension, extending into a long, wonderfully fresh finish.

    Food and wine pairing

    This white wine pairs wonderfully with seafood, such as oily fish like salmon, white-fleshed fish, or shellfish sautéed in butter. It also pairs very well with poultry prepared with white fruits, pasta in creamy sauces, as well as soft-ripened cheeses such as Brie or Camembert.

    Service and storage

    For optimal tasting, it is recommended to serve this wine at a temperature between 11 and 13°C. While it can be enjoyed young, this white wine has great aging potential and will continue to evolve in the cellar until around 2031.

    The estate

    Founded in 1920 by Arsène and Flavie Amiot, Domaine Guy Amiot et Fils is a major reference in Burgundy. Located in the heart of the Côte de Beaune, this independent family estate oversees 12 hectares of vineyards. Combining respect for tradition with a modern approach to winemaking, the estate produces wines renowned for their exceptional quality. Today, the domaine is run by Thierry Amiot, in charge of winemaking, alongside his brother Fabrice for commercial development, and his daughter Héloïse, representing the fifth generation.

    The vineyard

    This cuvée comes from a vineyard of approximately 2.30 hectares, spread across a dozen small plots located on the lower slopes of Chassagne-Montrachet. Facing east, these vines benefit from ideal morning sunlight. With an average age of 45 years, they thrive on clay-limestone soils typical of the appellation. The estate favors sustainable farming practices, with entirely manual harvesting to ensure a rigorous selection of grapes.

    The vintage

    The year 2023 stands out as an exceptional vintage in Burgundy. After a rather cool and humid spring, marked by some fungal pressure and very localized hail events, the situation improved considerably. The arrival of a particularly mild August helped accelerate the growing cycle. These ideal summer conditions favored optimal ripening of the berries.

    Winemaking and aging

    The making of the Chassagne-Montrachet Village "Vieilles Vignes" 2023 relies on a skillful blend of traditional methods and modern tools. Winemaking and aging take place in oak barrels. The wine benefits from an extended aging period of up to 20 months, allowing its aromatic complexity to develop fully. Racking into tank is carried out after twelve months, followed by bottling after a year and a half of aging, with careful inerting to ensure the wine's stability.
