    Description

    An authentic red wine from Burgundy

    The estate

    Founded in 1835 by Simon Boillot in the heart of the Côte de Beaune in Meursault, France, Domaine Matrot is a historic figure in Burgundy. Today, sisters Adèle and Elsa Matrot, representing the sixth generation, run the estate with passion. True to a philosophy of authenticity and simplicity, the domaine spans some twenty hectares. Committed to environmental respect, the current owners officially began converting the vineyard to organic farming in 2023, perpetuating the excellence and purity that have made their wines renowned.

    The vineyard

    This wine from Burgundy comes from vines averaging thirty-five years of age, deeply rooted in the clay-limestone soils typical of the region. The vineyard benefits from meticulous, environmentally respectful management, with controlled yields to ensure optimal aromatic concentration and a beautiful mineral expression.

    The vintage

    The year 2023 unfolded against a backdrop of climate warming, marked by particularly high summer temperatures and a very early véraison. To preserve the freshness and natural acidity of the berries in the face of this intense heat, the harvest was carried out very early in the morning.

    Winemaking and aging

    The hand-harvested grapes for this 2023 Bourgogne Pinot Noir undergo fermentation with indigenous yeasts lasting twelve to eighteen days, preceded by a cold maceration. Gentle pump-overs and daily punching down promote delicate extraction. Malolactic fermentation is complete. The wine is then aged for eleven to eighteen months in oak barrels, with a very moderate proportion of new wood (10 to 20%), before finishing with three months in stainless steel tanks and light filtration.

    Tasting notes

    Color
    The glass reveals an elegant ruby-purple hue with violet highlights, enhanced by crystalline, translucent brightness.

    Nose
    Fine and subtle, the bouquet opens with vibrant aromas of small red and black fruits such as cherry and raspberry, heightened by delicate floral notes of violet and peony. With aeration, it reveals lovely complexity with touches of spice, white pepper, gingerbread and fresh herbs.

    Palate
    Juicy and immediate from the first sip, the palate offers a full, caressing texture, supported by remarkably supple, silky tannins. The balance is masterful between fruit, tension and freshness. The long, mouth-watering finish lingers on notes of wild red fruits with a very pleasant touch of invigorating bitterness.

    Food and wine pairing

    This red wine pairs wonderfully with roasted poultry, white meats in cream and mushroom sauces, or lightly grilled red meats. It will also perfectly accompany fine cold cuts as well as Burgundian cow's milk cheeses such as Époisses.

    Service and storage

    This 2023 Bourgogne Pinot Noir is best enjoyed until around 2030. For optimal aromatic expression, it is recommended to let it breathe for an hour in the bottle or decanter before serving.
