    Tasting

    Nose
    The aromatic bouquet reveals itself as opulent, unveiling notes of candied pear, damp straw and fresh earth. Subtle hints of ground coffee, truffle, hazelnut and vanilla further enrich this complex olfactory palette.

    Palate
    Ample and structured, the palate offers a soft and subtle texture, typical of the mineral elegance of its terroir. It unfolds delicious notes of fleshy yellow apple and star fruit. A beautiful acidity balances this natural richness, bringing freshness through to a persistent finish.

    Food and wine pairings

    This white wine pairs wonderfully with meaty seafood such as tuna, salmon or scallops in a cream sauce. It will also enhance a roasted or sauced poultry dish, mushroom-based creations such as pike quenelles, as well as aged hard cheeses.

    The estate

    Founded in 1859 by Louis Henry Denis Jadot, the Louis Jadot House is an essential institution located in Beaune, in the heart of Burgundy. At the head of a vast vineyard of approximately 225 hectares, the estate stands out for its unique model combining a high-quality négociant activity with rigorous vineyard management. Today led by Thomas Seiter, president since 2023, and Thibault Gagey, general manager, the estate perpetuates a historic savoir-faire. Committed to environmental respect, a large part of its vines obtained organic certification in 2024.

    The vineyard

    This Beaune wine comes from a specific parcel named "Le Clos Blanc", located within the famous Les Grèves climat, in the commune of Beaune. Facing east on a gentle slope, this shallow limestone terroir is characterised by sandy and gravelly soils. The vineyard is divided into two sections: an upper section planted in 1963 and a lower section planted in 1975. These unique geological conditions favour naturally modest yields, thereby concentrating the aromas at the heart of the berries.

    The vintage

    The 2023 vintage was marked by capricious weather, culminating in intense heat at the beginning of September. To preserve freshness and avoid over-ripening, the harvest began early. Rigorous vineyard management, including green harvesting, made it possible to control the generous yields of this year. These climatic conditions proved particularly favourable to the vegetative cycle, offering grapes of optimal maturity.

    Winemaking and ageing

    True to the estate's minimal-intervention philosophy, vinification takes place exclusively in wooden barrels, with partial malolactic fermentation. Ageing then continues for 14 to 18 months in French oak barrels, 30% of which are new and lightly toasted at low temperature to preserve the brightness of the fruit. The wine is finally fined with bentonite and very lightly filtered before gravity bottling.
