    Tasting

    Appearance
    The wine reveals a beautiful pale yellow hue, enhanced by very subtle golden highlights. Its clarity and brilliance testify to its great purity.

    Nose
    The aromatic bouquet opens with notes of damp earth, white flowers and melon, delicately underlined by musky nuances. With aeration, scents of citrus fruits, such as grapefruit and lemon zest, add a refreshing dimension to the whole.

    Palate
    The attack is lively, carried by flavours of white-fleshed fruits and citrus. The mid-palate reveals a generous, supple texture, perfectly balanced by a subtle acidity that brings tremendous energy. The remarkably long finish stretches out on notes of citrus peel, a noble bitterness and a delicate saline touch.

    Food and wine pairings

    This white wine pairs wonderfully with oysters, seafood or noble fish such as turbot and sole served with a lemon butter sauce. It also elegantly accompanies white meats, such as roast poultry with mushrooms, or delicate Asian dishes like sushi and sashimi.

    Serving and cellaring

    This Chablis 1er Cru "Fourchaume" 2023 reveals fine expressiveness in its youth and can be cellared to be enjoyed until around 2033.

    The estate

    Founded in 1859 in Beaune, the Louis Jadot House is a true institution in Burgundy. At the helm of a vast vineyard of around 130 hectares, it showcases the richness of Burgundian terroirs. Since 1985, the estate has belonged to the American group Kobrand Fine Wine & Spirits, while retaining local, family-led management. Today, the Gagey family, alongside Thomas Seiter as president, ensures the continued excellence of the house. Louis Jadot stands out for its environmental commitment and its determination to let each Climat express its own identity.

    The vineyard

    Located on the right bank of the Serein, the Fourchaume Climat is one of the most renowned in Chablis. The vines benefit from excellent south and south-west exposure on well-ventilated slopes. The terroir is characterised by soils of Jurassic marls and limestones, with a large proportion of Kimmeridgian formations rich in marine fossils. The house applies sustainable viticulture practices, detailed in its "Green Book", in order to preserve soil health and local biodiversity.

    Winemaking and aging

    For this Chablis 1er Cru "Fourchaume" 2023, the grapes are pressed before fermentation in vats under rigorously controlled temperatures. The malolactic fermentation is managed with great precision to preserve the wine's natural tension while lending it a lovely roundness. Aging then takes place in oak barrels, with a very limited proportion of new wood, in order to preserve the purity of the fruit and the mineral identity of the terroir.
