Tasting
Appearance
This wine reveals a pale to light yellow hue, brightened by subtle green reflections in its youth. It stands out for its beautiful clarity and dazzling brilliance.
Nose
The nose opens with generous notes of stone fruits, such as white peach and mirabelle plum, refreshed by hints of citrus. A mineral backbone evoking chalk and wet stone intertwines with delicate ageing nuances reminiscent of vanilla, almond and brioche, all underlined by subtle floral scents.
Palate
The attack is ample and enveloping, showcasing a vibrant fruit character. The whole seduces with its elegance, supported by a dynamic acidity and a mineral backbone that bring great freshness. The finish, long and refined, extends over fruity aromas and light buttery notes.
Food and wine pairings
This wine pairs wonderfully with fish in sauce, such as pike-perch with beurre blanc, or roasted scallops. It also brilliantly accompanies poultry in cream sauce, vegetarian dishes such as asparagus risotto, as well as soft cheeses or an aged Comté.
Serving and cellaring
To fully appreciate this white wine, it is recommended to serve it at a temperature between 10 and 12 °C.

The estate
Founded in 1859 in Beaune by Louis Henry Denis Jadot, Maison Louis Jadot is an institution in Burgundy. Both a négociant house and a wine estate, it oversees an in-house vineyard of approximately 125 hectares. Acquired in 1985 by the American group Kobrand Fine Wine & Spirits, its current owner, the estate was long led by the Gagey family. Today chaired by Thomas Seiter, the house shines internationally while preserving a deeply Burgundian identity, marked by respect for the terroirs and a transition towards organic farming.
The vineyard
Located in the north of the Côte de Beaune, at the foot of the Corton hill, the terroir of Ladoix benefits from privileged east and south-east exposures. The specific climat "Le Clou d'Orge" rests on clay-limestone soils nuanced with marl, silt and small pebbles, offering excellent drainage. The vineyard is the object of careful attention, with mechanical soil work and the abandonment of herbicides, in line with an overall approach of respect for biodiversity.
The vintage
The 2023 vintage is part of a demanding contemporary climatic context, marked by sometimes faster ripening, requiring particular attention to preserve the perfect balance between the freshness and maturity of the berries.
Winemaking and ageing
The harvest is carried out manually in small crates to preserve the integrity of the bunches. After a gentle pressing, fermentation takes place in oak barrels from the house's own cooperage, of which about one third is new wood. The wine then benefits from meticulous ageing of approximately fifteen months on fine lees before bottling.
