    Food and wine pairings

    This red wine pairs wonderfully with roasted or grilled red meats, as well as poultry dishes such as roasted quail with grapes. It is also an ideal companion to a platter of soft cheeses, such as Camembert, Brie or Époisses.

    Serving and cellaring

    For an optimal tasting experience, it is recommended to serve this Bourgogne Rouge "Couvent des Jacobins" 2023 at a temperature between 16 and 18°C. This wine can be enjoyed now, but it also has cellaring potential, allowing it to evolve favourably until around 2028.

    The estate

    Officially founded in 1859 by Louis Henry Denis Jadot, the Louis Jadot House is a leading institution of Burgundy. Based in the heart of Beaune, it enjoys an international reputation while preserving a deep respect for its terroirs. The estate cultivates an extensive vineyard of 125 hectares and produces cuvées that reflect the richness of the region. Owned by the American group Kobrand Fine Wine & Spirits since 1985, the House is today led by its president Thomas Seiter, in close collaboration with the Gagey family, thus perpetuating a historic expertise combined with strong environmental commitments.

    The vineyard

    This Burgundy wine is the result of a rigorous selection of plots spread across several emblematic terroirs: the Côte d'Or with its clay-limestone soils, the Hautes Côtes de Beaune and de Nuits offering higher altitudes, as well as the Saône-et-Loire department. The vineyard is managed according to an environmentally respectful philosophy, incorporating sustainable practices such as biodiversity preservation, grass cover and limited use of inputs, in order to allow the full authenticity of these different climats to express itself.

    Winemaking and aging

    The grapes destined for the Bourgogne Rouge "Couvent des Jacobins" 2023 are harvested at optimal ripeness. Winemaking begins with a maceration of about two weeks, allowing gentle extraction to preserve the finesse of the fruit. Aging then takes place over a period of 9 to 16 months, split between oak barrels to add complexity, and stainless steel or concrete tanks to preserve all the freshness and purity of the grape variety.
