    Tasting

    Appearance
    Although this specific vintage has yet to reveal all its secrets, the customary style of this cuvée suggests a pale robe with elegant golden highlights.

    Nose
    True to the expression of its climat, the bouquet is expected to unfold around aromas of ripe citrus and lemon zest. These fruity notes are typically accompanied by an earthy, mineral dimension, sometimes rounded out by subtle touches of stone fruits such as peach or apricot.

    Palate
    The interpretation of this terroir traditionally delivers a broad, structured palate. A vibrant acidity brings lovely tension to the whole, guiding the tasting towards a long, indulgent finish marked by its characteristic salinity.

    Food and wine pairings

    This great white wine pairs beautifully with fine seafood such as pan-seared scallops or oysters, as well as delicate fish dishes. It is also a perfect match for quality poultry served with a creamy sauce, a Milanese risotto, or refined vegetarian dishes showcasing asparagus or root vegetables.

    Serving and cellaring

    To fully appreciate the Chablis Grand Cru "Blanchot" 2023, it is recommended to serve it at a temperature between 11 and 13 °C. Decanting for thirty minutes to an hour may be considered in its youth to help it open up. Built for ageing, this cellaring wine will develop its full complexity in the cellar and can be enjoyed until around 2030.

    The estate

    Officially founded in 1859 in Beaune, the Louis Jadot House is a true institution in Burgundy. The estate covers approximately 125 hectares of vineyards under its own ownership. Although it has belonged to the American Kobrand group since 1985, its operational management remains rooted in local tradition, entrusted to the Gagey family and currently chaired by Thomas Seiter. Renowned worldwide, the House stands out for its commitment to letting each terroir express itself authentically, thus offering a faithful and prestigious overview of Burgundy's appellations.

    The vineyard

    Located on the right bank of the Serein river, the Blanchot climat is one of the seven Grands Crus of the Chablis appellation. The vines thrive on a steep slope enjoying a privileged easterly and south-easterly exposure. This terroir is distinguished by its Kimmeridgian clay-limestone soils, rich in marl and marine fossils, which give the grapes a singular minerality, great finesse and remarkable tension.

    Winemaking and ageing

    The making of the Chablis Grand Cru "Blanchot" 2023 relies on a classic approach aimed at respecting the identity of its terroir. Vinification takes place jointly in vats and barrels, with a deliberately limited proportion of new oak so as not to mask the fruit. The wine then benefits from ageing on the lees, which allows it to develop its aromatic complexity and texture while preserving its natural freshness.
