    Appearance

    This red wine pairs harmoniously with roasted poultry, such as braised guinea fowl, or fine charcuterie such as jambon persillé. It also pairs very well with pressed cheeses of moderate ageing such as Comté, as well as contemporary dishes based on roasted vegetables, grains or sautéed mushrooms.

    The estate

    Officially founded in 1859 by Louis Henry Denis Jadot, Maison Louis Jadot is a key figure in Burgundy. Based in Beaune, it tends to a 125-hectare vineyard while also carrying out a significant négociant activity. Recognisable by its label adorned with Bacchus, the estate has belonged to the American Kopf family since the 1980s. Now led by Thomas Seiter, the house stands out for its transition to organic farming and its adaptation to climate challenges, always seeking to reveal the authentic identity of each terroir.

    The vineyard

    The "Grand Clos Fortoul" climat is a Premier Cru of the Mercurey appellation, located in the Côte Chalonnaise in France. Extending the geological line of the Côte de Beaune, this terroir rests on soils mainly composed of limestone and marl. The vines benefit from varied exposures that encourage a delicate expression of the grape variety. In an environmentally respectful approach, the estate adapts its cultivation practices to preserve biodiversity and address global warming.

    Winemaking and aging

    To craft the Mercurey 1er Cru "Grand Clos Fortoul" 2023, the house favours an oenological approach aimed at respecting the identity of its origin. Vinifications are carried out separately, with measured macerations to extract colour and tannins while preserving freshness and aromatic finesse. The ageing is designed to preserve the brightness of the fruit and offer beautiful tannic suppleness, avoiding any over-extraction.
