Appearance
A delicate pale yellow hue, enhanced by emerging golden reflections, defines this wine.
Nose
Elegant and expressive, the nose opens with a captivating floral bouquet blending hawthorn and acacia. It is then enriched by notes of warm brioche, butter and toasted bread, complemented by touches of stone fruit and ripe lemon.
Palate
Displaying beautiful precision, the palate offers a refined balance between an exceptionally fresh attack and a delicately silky texture. The finish, of remarkable length, stands out for its mineral persistence evoking chalk and stone.
Food and wine pairings
This white wine pairs ideally with white meats in a light sauce, such as poultry supreme with mushrooms or a fillet of veal. It also accompanies seasonal vegetable gratins beautifully, as well as cheeses such as Comté or fresh goat's cheese.
Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature between 12 and 14°C. This well-structured wine can be enjoyed now but will continue to develop in the cellar until around 2038.
The elegance and minerality of a white wine from Pernand-Vergelesses
The estate
Founded in 1859 by Louis Henry Denis Jadot, the Maison Louis Jadot is an emblematic institution located in Beaune, in Burgundy. Although the family's winegrowing roots date back to 1826, it was this official creation that truly structured the estate. Today, the vineyard extends over more than 210 hectares of prestigious terroirs. Owned by the Kopf family since 1985 and led by Thomas Seiter since 2022, the estate stands out for its deep respect for the soils, a philosophy of minimal intervention and a strong environmental commitment, having banned synthetic products for two decades.
The vineyard
Located in the Côte de Beaune, the village of Pernand-Vergelesses is home to the "En Caradeux" climat, at the heart of which lies the Clos de la Croix de Pierre. This hillside terroir, perched between 260 and 380 metres in altitude, is characterised by limestone soils that are particularly stony, promoting excellent drainage. While this clos is historically dominated by Pinot Noir, Chardonnay vines were planted there more recently. The estate applies organic principles, certified Haute Valeur Environnementale (HVE) level 3, and favours working the soils with horses on the most challenging slopes.
Winemaking and aging
The harvest is carried out by hand in small crates in order to preserve the integrity of the berries. After gentle pressing, the musts ferment in oak barrels from the estate's own cooperage, one third of which are new. The wine then benefits from meticulous aging on fine lees for approximately fifteen months, giving it beautiful aromatic complexity and great stability before bottling.
