    Tasting

    Color
    The color reveals a brilliant pale yellow hue with subtle golden highlights.

    Nose
    The aromatic bouquet opens with floral notes of acacia and honey, complemented by hints of citrus and a lovely minerality. Barrel aging brings delicate nuances of white fruit and toasted hazelnuts.

    Palate
    Full-bodied and round, the palate reveals delicious notes of pineapple and stone fruit. The overall impression is seductive, with a precise balance between fruity generosity, creamy texture, and mineral tension, extending into a lingering finish.

    Food and Wine Pairing

    This white wine pairs beautifully with raw scallops, shellfish, or grilled fish. It will also elevate fish in creamy sauces as well as goat cheeses.

    The Elegance and Mineral Precision of a Chassagne-Montrachet Wine

    The Estate

    Officially founded in 1797, the House of Louis Latour is a true institution in Burgundy. Still independent and family-owned, it is today led by Florent Latour, representing the eleventh generation, alongside Eléonore Latour. Based in Aloxe-Corton and Beaune, France, the estate owns 48 hectares of vines, making it the largest owner of Grand Cru-classified plots in the region. The estate stands out for its long-standing commitment to sustainable viticulture, its gravity-flow winery, and its own in-house cooperage, a craft preserved for more than two centuries.

    The Vineyard

    The "Les Chenevottes" climat is located within the Chassagne-Montrachet appellation, at the base of the Mont-Rachet hill. Facing southeast on gentle slopes, at an altitude ranging from 220 to 330 meters, the vines, with an average age of 35 years, thrive on soils composed of clay and limestone. This terroir offers ideal drainage and optimal sun exposure.

    The Vintage

    The year 2023 was marked by a mild spring and a hot summer with low rainfall. These weather conditions favored generous yields and optimal ripening of the berries, resulting in concentrated fruit while preserving lovely freshness.

    Winemaking and Aging

    The hand-harvested grapes are pressed directly. The Chassagne-Montrachet 1er Cru "Les Chenevottes" 2023 undergoes traditional fermentation in oak barrels, along with complete malolactic fermentation. Aging then takes place for 8 to 10 months in medium-toast French oak barrels, 50% of which are new, all crafted by the estate's own cooperage.
