    Tasting

    Colour
    The colour reveals a bright yellow hue with golden glints.

    Nose
    The aromatic bouquet opens with seductive exotic notes, blending scents of yellow peach with delicious brioche touches.

    Palate
    Full-bodied and generous, the palate reveals delicious notes of fresh apricot and almond. The whole is perfectly balanced by a lovely mineral tension that extends into a persistent finish, typical of its terroir.

    Food and Wine Pairing

    This great white wine from France pairs wonderfully with seafood, oysters or grilled fish. It will also enhance fish in cream sauce, fine cold meats, dishes featuring hazelnuts or a goat's cheese.

    Service and Storage

    To fully enjoy its aromatic palette, it is recommended to serve the Chassagne-Montrachet 1er Cru "Le Cailleret" 2023 at a temperature between 12 and 14 degrees. This wine can be enjoyed today but will continue to improve in the cellar, keeping until around 2030.

    Other Characteristics

    During the harvest, the berries showed a pH between 3.25 and 3.3, reflecting a fine natural balance despite the heat of the year.

    The Estate

    Founded in 1982, the Vincent Girardin house has established itself as a key reference in Burgundy. Based in Meursault, the estate started with just two hectares before expanding to cultivate around 32 hectares of vines today. Renowned for its haute couture viticulture and deep commitment to expressing limestone terroirs, the estate produces wines of great purity. Since 2012, management has been overseen by Jean-Pierre Nié, while technical expertise remains in the hands of the talented cellar master, ensuring the continuity of this prestigious signature.

    The Vineyard

    This wine comes from the renowned lieu-dit Le Cailleret, one of the most highly regarded terroirs in Chassagne-Montrachet. Located at an altitude of between 300 and 350 metres, the vines benefit from an excellent east and southeast-facing exposure, promoting slow, optimal ripening of the berries. With an average age of 30 years, they thrive on soils composed of clay and limestone, rich in stones, which give the wine its remarkable complexity. Yields are strictly limited to ensure maximum concentration.

    The Vintage

    The growing season was mainly marked by episodes of intense heat. Despite these particularly hot climatic conditions, the vegetative cycle progressed optimally, allowing the berries to reach excellent ripeness while retaining a lovely sense of natural freshness.

    Winemaking and Aging

    The making of the Chassagne-Montrachet 1er Cru "Le Cailleret" 2023 follows the purest Burgundian tradition. Fermentation takes place entirely in French oak barrels, accompanied by complete malolactic fermentation. The wine is then aged for 8 to 10 months in these same medium-toast barrels, 50% of which are new oak. This meticulous method allows the oak to integrate harmoniously while preserving the identity of the terroir.
